Happy #ValentinesDay to you all! 🥰 Hope you are spending the day with your friends, family, significant other, or some self-love 💕 I will be spending it enjoying this DELICIOUS Sweet Potato Brownie 😍 Like DANG y’all...this is the gooiest brownie I have ever had & I am lovin’ every bite of it 🤩

Recipe📝
Wet Ingredients:
▫️3/4 Medium Sweet Potato
▫️1 Pastured Brown Egg (@vitalfarms)
▫️1 tsp Vanilla Extract
▫️1 tbsp Honey
▫️1 tbsp Coconut Oil (@vitacoco)
▫️1/4 cup Almond Butter (@maranathanutbutters)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dry Ingredients:
▫️1/4 cup Cocoa Powder (@hersheys)
▫️1/2 tsp Baking Soda
▫️1 tbsp Almond Flour (@natureseats)
▫️Pinch of Salt
▫️Semi-Sweet Mini Chocolate Chips (@enjoylifefoods)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Icing:
▫️1/4 Medium Sweet Potato
▫️1 cup Powdered Sugar
▫️1/4 Cocoa Powder
▫️1/2 tsp Vanilla Extract
▫️3-4 drops Red Food Coloring
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 425°. Add your whole medium sized sweet potato (I like to cut it in half so it’s easier to cook evenly). Roast in the oven for 45 mins.
Once the SP is ready, cut 3/4 of it (saving the other 1/4 for the icing). Add to a blender, along with all the other wet ingredients. Blend until there are no lumps (this just helps to easily purée the SP rather than mashing it yourself).
Lower the oven to 350°.
In a bowl, evenly mix together all your dry ingredients except the chocolate chips. Then mix in the wet ingredients. Lastly, add in as many chocolate chips as you’d like.
The batter is now ready! Pour into a 6.5” skillet (or any baking dish) & spread evenly.
Cook in the oven for 20-25 mins. This will allow the center to be super moist & gooey 🤤
While that’s cooking, blend all your ingredients for the icing in your blender. Add to a piping bag so it’s ready to go!
Once the brownie has cooked, allow it to cool for 15 mins before icing it.
I made a heart shape with the icing & sprinkled on some freeze dried raspberries for a pop of color ♥️
Enjoy with some vanilla bean ice cream & eat straight from the skillet! 😋
