  • getting close up with my soup that I’m eating while cozied up on the couch 🤗 this meal was just what I was in the mood for and it’s @eatsbyames chickpea, turmeric & lime soup which includes lots of veggies like chickpeas, sweet potatoes, spinach, zucchini, & peppers.   • Easy falafel and tahini sauce recipes by @wearesovegan. Recipe makes 20 falafels:
For the falafel:
2 x 400g tinned chickpeas
1 cup coriander leaves
1 cup parsley leaves
1/2 tsp each of salt, pepper and paprika
2 cloves garlic
1 small onion
1/4 cup breadcrumbs
8 sun-dried tomatoes
1/2 cup olive oil for frying
1. Prepare ingredients by draining the chickpeas and sun-dried tomatoes, then roughly chopping the onion and garlic. It’s important you remove as much excess water from the chickpeas as possible.
2. Place all the falafel ingredients into a food processor and process until everything is roughly combined and easy to handle. Make sure you don’t process the mixture for too long, otherwise the falafel will fall apart when it’s frying.
3. Remove roughly a tablespoon of the mix and roll into a ball shape. Repeat until all the mix is used up.
4. Heat oil to a high temperature in a frying pan, then add all the balls and fry for 3 minutes on each side or until evenly golden brown.
Tahini Dressing Recipe:
3 tablespoons lemon juice
2 tablespoons water
2 tablespoons tahini paste
Pinch of salt and pepper
Mix ingredients together well and serve

  • SWEET POTATO BROWNIE BITES🍫🙌🏼:
Recipe slightly adapted from @projectmealplan

An oldie but a goodie! And I know, I know. You hear sweet potato and are like, for real?😒 I swear on all that is holy (my @halotopcreamery ice cream that is), that I would confidently bring these to ANY social gathering. They are that good. Legit taste like brownie bites (better in my opinion) from Costco. Proceed with caution though. They are the definition of temptation.

WET INGREDIENTS
1 medium to large sweet potato (about 10oz)
1 tbsp maple syrup
1 tbsp almond milk
1 cup almond butter
1 tsp vanilla extract

DRY INGREDIENTS
1/4 cup & 2 tbsp @kodiakcakes 
1/4 cup & 2 tbsp cocoa powder
2/3 cup coconut sugar
1-1/2 tsp baking soda
1/8 tsp salt
1/2 cup mini chocolate chips

DIRECTIONS
1. Preheat oven to 400. Poke holes in sweet potato. Bake 45-55 in preheated oven until juice emerges from poked holes. Remove from oven and lower temp to 325.
2. Let it cool. Peel sweet potato skin. Combine sweet potato, maple syrup, almond milk, almond butter, and vanilla in large bowl. Mix until smooth.
3. Throw in all dry ingredients and mix until thoroughly combined. *Save some mini chocolate chips to sprinkle on top. 
4. Spray 24 count mini muffin pan with nonstick spray. Place heaping tbsp of brownie batter in each space. Sprinkle extra mini chocolate chips.
5. Bake at 325 for 13-16 minutes (I did 14). Brownie bites are done when a toothpick comes out *mostly* clean. Let cool in pan for 5 minutes then remove to continue cooling on rack. Store in freezer or refrigerator. Enjoy y'all!

  • Sweet potato crust pizza by @wearesovegan. Recipe:
For the base:
500 g sweet potato peeled and roughly chopped
2 cups oat flour
For the filling:
2 tbsp tomato puree
1 cup spinach
1 red onion sliced
3 chestnut mushrooms sliced
1 red pepper sliced
2 garlic cloves diced
pinch of salt & pepper
2 tsp Italian herbs
1 tsp chili flakes
2 tbsp olive oil
a few basil leaves
60 g vegan mozzarella sliced
1. Preheat oven to 200°C and line a large baking tray with greaseproof paper.
2. Cook the sweet potato in a steamer for 20 minutes or boil the potato until soft.
3. Transfer the soft sweet potato to a mixing bowl and mash. Then add oat flour and mix with a wooden spoon until well combined.
4. Prepare a little water in a small bowl and use it to wet your hands, then shape the sweet potato dough into a ball and place it on the lined baking tray. Dipping your hands in the water will make it easier to shape the dough without it sticking to your hands.
5. Shape the dough into a circle roughly 0.5cm thick and smooth it out around the edges.
6. Bake the dough in the preheated oven for 15-18 minutes.
7. Meanwhile, prepare the toppings by mixing together the onion, pepper, mushrooms, garlic, salt, pepper, italian herbs, chilli flakes and olive oil until the veggies are fully coated in the seasoning.
8. Once the dough has finished baking, remove from the oven and spread the tomato puree on top followed by a layer of spinach. Then, start layering the veggies on the pizza.
9. Finish with slices of vegan mozzarella, some basil leaves and a drizzle of olive oil.
10. Bake in oven for 8-10 minutes.
