INGREDIENTS⠀
Crust⠀
1 cup (~180g) pitted medjool dates⠀
2/3 cup water⠀
1/2 cup (60g) coconut flour⠀
1/4 cup (20g) cacao powder⠀
1/2 tsp salt⠀
Ice Cream⠀
2 cups (240g) raw cashews⠀
1 cup (240g) coconut milk*⠀
1/4 cup (80g) maple syrup⠀
1/2-1 tsp spirulina⠀
1/2-1 tsp turmeric⠀
1/2 cup blueberries, pureed⠀
Cover the cashews with warm water and soak for at least 30 minutes (if you don’t have a high speed blender, you will need to soak them for at least a few hours).⠀
Blend the dates and water.⠀
In a bowl, combine the coconut flour, cacao powder, and salt. Stir.⠀
Add the date paste and mix to form a sticky dough. If it’s too dry/crumbly add a few tablespoons of water.⠀
Press into the bottom of a pan/dish lined with parchment paper or plastic wrap (I used a 9×6″ tupperware). Set aside.⠀
Blend the (soaked and drained) cashews, milk, and maple syrup until very smooth and creamy.⠀
Divide into 3 bowls. Mix the spirulina into one, turmeric into another, and blueberry puree into the last. Add more/less to reach desired color.⠀
Spoon/dollop the colors on top of the crust and swirl with the back of a spoon or a straw.⠀
Freeze overnight.⠀
Once frozen, cut into bars and top with melted chocolate if desired.⠀

Ingredients for Jackfruit Pork:
4 tbsp olive oil
1 medium red onion, finely diced
4 cloves garlic, finely diced
1/8 tsp ground cloves
¼ tsp ground cinnamon
½ tsp ground cumin
2 tsp dry oregano & more for fries
½ tsp chilli power, adjust to taste
2 tbsp tomato paste
2 tins of young (green) jackfruit in water
4 tbsp soy sauce
2 tbsp maple syrup
¼ tsp white pepper (or black)
2 tsp apple cider vinegar
Remaining ingredients:
1 small cucumber, sliced
a handful of sweet cherry tomatoes, quartered
vegan tzatziki
6 large Greek pitas
6 Romaine lettuce leaves, shredded
1 small red onion, finely sliced
2 medium potatoes (optional)
olive oil
Drain both jackfruit tins. Cut the firm, pointy ends off each triangular piece of jackfruit. Set aside.
Heat up olive oil in a medium, heavy-bottomed, pan. Fry diced red onion until softened, translucent and lightly caramelised. Add chopped garlic and fry off gently until soft and fragrant.
Add most of the spices: cloves, cinnamon, cumin, and oregano to the onion-garlic mixture. Fry them off gently, stirring the whole time, for a minute or so.
Mix in the tomato paste.
Now add in the prepared jackfruit along with soy sauce, maple syrup and apple cider vinegar. Mix everything really well. Squash the jackfruit pieces with your mixing spoon so that the individual fibres separate more. Season with white pepper and a pinch of ground chilli if you wish. Simmer the mixture gently for another 10-15 minutes and then allow it to cool down. Place in the fridge overnight to intensify the flavour.
Just before you are ready to assemble your gyros, set the oven to 200° C / 390° F (fan function). Spread the jackfruit pieces on a baking paper-lined baking tray and bake for about 20-25 minutes, until a little caramelised and browned around the edges.

Blend the dates and water. In a bowl, combine the coconut flour, cacao powder, and salt. Stir. Add the date paste and mix to form a sticky dough. If it’s too dry/crumbly add a few tablespoons of water. Press into the bottom of a pan/dish lined with parchment paper or plastic wrap (I used a 9×6″ tupperware). Set aside. Blend the (soaked and drained) cashews, milk, and maple syrup until very smooth and creamy. Divide into 3 bowls. Mix the spirulina into one, turmeric into another, and blueberry puree into the last. Add more/less to reach desired color. Spoon/dollop the colors on top of the crust and swirl with the back of a spoon or a straw. Freeze overnight. Once frozen, cut into bars and top with melted chocolate if desired.   • A perfect day for a Recipe challenge 👨‍🍳 !. Today, I went to the world of Indian 🇮🇳 Cuisine, the Spices Paradise. I made a Chicken 🐔 Tikka Massala , a recipe by @buzzfeedtasty tasty. The Chicken Tikka Masala is a traditional dish 🍛 from India and it’s  literally an intense dish full of different and colorful spices .By the way most of the spices are Indian , specially Garam Masala.

The 📖 recipe itself is well explained and easy to do,  however  I changed things like the amount of spices for the chicken sauce 🐔 ,  I  used one teaspoon on each spice and natural cilantro 🌿 for the sauce to make it stronger.Also, I  leave the chicken chill overnight 🌙 instead of one and a half hour, this will allow the chicken to absorb more the spices and intensify the flavor!.
