PARMESAN & LEEK POTATO CAKES!
I made these a few weeks ago, in a frantic bid to make brunch for everyone. I’ve been thinking how I could improve it. One word. PARMESAN!
Boil some potatoes so you can mash them later on. In a pan, add frylight. Begin to fry up leeks in some garlic, cook them until the begin to caramelise. Then remove from the pan and set aside.
When your potatoes are mashed, add 25g of flour, 2 tbsp of parmesan for 3syns, dash of paprika, ground coriander, celery salt and 2 tsp of oil. Mash it up. Chop up your leaks then add and mix together. When it is all combined, then you’re good to go!
Heat a pan with more fry light, take a scoop of mash and form into potato cake shapes. Add it to the pan and cook until golden, flip it and do the same on the other side.
To serve, just stick them on a plate, top with fried eggs, sprinkle of paprika, sunflower and pumpkin seeds, spring onion, chilli flakes, sprinkle of parmesan shavings and a few caramelised leeks saves from earlier. Season with salt and pepper.
This is made even better with a wee squeeze of sriracha on top ⚡️✌🏻
