  • #whole30 #slowcooker chicken and sweet potato curry
*******************************************
•dice 1 medium onion, 2 medium sweet potatoes, and 1-2 red bell peppers.
•add to crock pot along with 1 TBSP of minced garlic, 3-4 TBSP curry powder (we used 4), 2 tsp salt, 1 tsp cumin, 1 tsp turmeric, 1/4-1/2 tsp cayenne pepper, 1.5 cups of fresh or frozen green beans, and 24 oz of chicken stock/bone broth.
•stir to combine
•place chicken on top (we used 8 boneless skinless chicken thighs)
•season chicken with salt, pepper and garlic powder
•cook on low for 6 hours
•after 5 hours of cook time, add a can of full fat coconut milk and continue cooking for the final hour
•chop the chicken into bite size pieces and return to crock pot
•taste and adjust the salt as needed (we needed to add more but used bone broth that has very little sodium in it)

🍴Bumbu Aromatik : Bawang merah, Bawang putih, Daun bawang (potong kecil, cincang)

🍶LT : Disini LT-nya saya pakai utk menggoreng saja. Bisa pakai minyak kanola, minyak kedelai, ELOO, minyak biasa jg bisa jika tdk ada. Asal minyaknya adalah minyak baru.

-Cuci beras dan masukkan ke dalam pot SC
-Tambahkan bawang putih, bawang merah dan daun bawang ke dalam pot SC
-Masukkan dada ayam cincang, serta wortel cincang
-Tambahkan air secukupnya (bisa agak banyak agar hasilnya tidak terlalu kering)
-OPTIONAL : beri sejumput garam
-Nyalakan SC, set timer 4 jam (timer bisa disesuaikan dgn kebutuhan dan kebiasaan)

-Cuci bersih tempe, potong dadu kecil
-Panaskan penggorengan, masukan minyak
-Goreng tempe seperti biasa, sampai matang

I was introduced to this super food when I started following 1 of my idols @chefpeteevans 🙌🏻
It's super yummy, filling, so easy to make, has so many health benefits & the best part is its super CHEAP to make!
Theres heaps of recipes out there of how to make it but I thought I'd share with you how we make it. Its just our own adaptation of a recipe we found on google. We go through a batch a week. Sometimes we'll even add noodles, some fresh herbs & veggies & Bon appetite we've got a lazy mums tea. 👌

Place bones in a slowcooker. The boneier the better. I sometimes use left over bones from our roasts too. About 1kgs worth you'll need. Often I can pick up 5kg boxes of raw chicken carcasses for about $5 from our local butcher. Add about 5 litres of cold water, 2 tablespoons of apple cider vinegar, Vegetables & Herbs which ever your hearts desire, I usual use which ever vegetables are looking a bit old & seen better days in our fridge, the same with our herbs. We collect herbs from our garden or we often will grab packets of the reduced down herbs from the grocer for a couple of cents each & pop them in the freezer for our broth cook ups. I also always pop in an onion cut in half. 1 garlic bulb cut in half, 1 tablespoon of peppercorns, 2 teaspoons of turmeric & about 2 dry bay leaves. Cook on low for 12-24 hours. The longer you cook the broth, the richer & more flavourful it will be. 
Strain the broth through a sieve into a large bowl, cover & place in the fridge overnight so that the fat rises to the top & congeals. Remove the fat. We reserve ours for cooking but you dont have too. We then seperate into smaller containers for storage. It will usually keep in the fridge for up to 1 week or in the freezer for up to about 3 months.
