How about we give you a sub-30 minute recipe for this 30 minute Thursday. We’re obviously big on meal prep (you should be too), it helps us stick to our 80% whole food/healthy diet so we could enjoy our 20% donut/ice cream/cake diet. But-but-but, we wouldn’t want our 80% to be boring or just salads and grilled chicken breasts, right?
We’re a huge fan of spices, they keep both food and life interesting, don’t they? It is unbelievable how spices/herbs give so much variation to meals; saves you from having the same thing day-in & day-out.
One pot chicken – mushroom – egg with rice, and some veggies (carrots and broccoli) alongside half an avocado.
This is more or less how an ideal plate should look like – colorful, balanced, healthy, and tasty. The chicken mushroom dish is packed with protein; the brown rice being the carb source; veggies give
enough fiber, minerals and vitamins; and coconut oil, egg and avocado are the healthy fat sources.
Protein: 63 g
Carbs: 63 g
Fat: 26 g
Fiber: 13 g
Coconut oil – ½ Tbsp. (appx 5-7 g)
Onion – ½ small
Tomato – 1 small
Chicken breast – 200 g
Mushroom – 50 g
Egg – 1
Spices - Chili flakes, Black pepper, ginger & garlic- 1tsp each
Salt - To taste
Heat oil in a nonstick over medium flame; add chopped onion and stir fry for 5 mins; add chopped tomatoes; after a few minutes add the spices; add chicken and cook for 10 mins over a high flame; add some water and let it simmer for 10 mins; add mushrooms and the egg; stir. Let it simmer at low flame for 5 mins or until the water evaporates. Dish it.
On the side - 1 serving (48 g uncooked) brown rice, 1 serving (85 g) carrot, 1 cup broccoli, and half an avocado. Enjoy.
I’ve posted a bit today but this is my first dinner post so here goes 🥗🥥🍗🍍🍅

Rabbi Tobias Geffen, an Orthodox Rabbi ✡️ who served Atlanta’s Congregation Shearith Israel from 1910 until his death in 1970 at the age of 99, is responsible for koshering Coke.
• While seltzer water might have been the preference of many traditional Jewish immigrants, their rapidly assimilating children and grandchildren demonstrated their Americanization 🇺🇸 by drinking Coke.
• Geffen contacted the company to ask for a list of Coke’s ingredients. At the time, Geffen did not know that the formula for Coca-Cola is a closely guarded trade secret 🤭 — perhaps one of the best-kept trade secrets in American 🇺🇸 history. Only a handful of individuals know the formula.
• Once Geffen inquired, the Coca-Cola Company made a corporate decision to allow him access to the list of ingredients in Coke’s secret formula provided he swore to keep them in utter secrecy. Geffen agreed to the terms. The company did not tell him the exact proportions of each ingredient, but just gave him a list of contents by name.
• Still, a second problem vexed Geffen: The formula for Coke included traces of alcohol that were a byproduct of grain kernels. Since anything derived from grains is chametz 🍞, or forbidden on Passover, Coca-Cola could not be certified kosher for use at Passover.
• Coke’s chemists experimented and found that, during the Passover season, they could substitute sweeteners produced from beet sugar and cane sugar for grain-based ones without compromising Coke’s taste. They agreed to start manufacturing Coke with the new sugars several weeks before Passover each year.
• Thanks to Rabbi Geffen, even the most observant Jews ✡️ can feel comfortable that “things go better with Coke.”

TERIYAKI CHICKEN PINEAPPLE KABOBS🥰👏🏼
Sauce Marinade Ingredients: • 1/2 c liquid aminos (or low-sodium soy sauce)
• 6 tbsp coconut sugar (or brown sugar)
• 2 cloves garlic, minced
• 1 tsp fresh ginger, grated (or sub 1/4 tsp ground ginger)
• Pinch of salt & black pepper
• 2 tbsp cornstarch
• 2tbsp water
• 3 boneless, skinless chicken breasts, cut in 1-inch cubes
• 1 fresh pineapple, cut into 1-inch cubes
• 1 small red bell pepper, cut into 1-inch chunks
• 1 small green or orange bell pepper, cut into 1-inch chunks
• 1/2 medium red or yellow onion, cut into 1-inch chunks
Make marinade: combine all ingredients in a small saucepan, bring it to a boil, reduce heat to low and simmer for 1-2 minutes, until slightly thickened. Remove from heat and let cool slightly. (Also, reserve about 3 tablespoons for basting the kabobs.) Place chicken pieces in large ziploc bag and add the teriyaki marinade (all but the reserved part) and toss to coat the chicken pieces. Marinade for at least 30 minutes (2 hours is best). Preheat grill and assemble kabobs. Grill kabobs over medium heat for 10-12 minutes, turning occasionally, until the chicken is cooked through and the veggies are softened. Brush with reserved teriyaki sauce at the end of the grilling time.
