  • Reposted from @andreeasbreakfast -  The almond joy oatmeal I had this week inspired me to make some ALMOND JOY VEGAN PANCAKES and to make them more fun, I added @rawnice pink pitaya powder and @rawnice blue spirulina powder and got them purple 💜. They were delicious, guys! I drowned them in syrup of course, just how I like them 🙈🤷‍♀️. Wishing you all a wonderful Sunday and a good start into the new week! 😘🤗 Also, million thanks for 34K! ALMOND JOY VEGAN PANCAKES (this recipe makes 10 pancakes)
🥞 50 g raw almonds
🥞 2 tbsp agave syrup
🥞 1 large ripe banana, mashed
🥞 1 tbsp coconut oil, melted
🥞 200 ml milk of choice (I recomand using almond milk)
🥞 130 g all purpose flour
🥞 1+1/2 tsp baking powder
🥞 1 tbsp @rawnice pink pitaya powder
🥞 1 tsp @rawnice blue spirulina powder
🥞 50 g dark chocolate chips (or chocolate chuncks)
🥞 2 tbsp crunchy almond butter
🥞 2 tbsp dessicated coconut

Roughly chop almonds. Add them in a non stick pan with 1 tbsp of agave syrup and cook them on low heat for 5 minutes until they become fragrant and they caramelise. Let them cool. In a large bowl mix together mashed banana, coconut oil and milk. Add in next flour, baking powder, pink pitaya and blue spirulina powder. Mix well. Now add in coconut, chocolate chips and caramelised almonds and fold them in with a spatula. Lastly add in the almond butter and mix to incorporate it. Let the batter sit for a couple of minutes then start cooking your pancakes for about minute per side. .

  • No photo editing here... You are seeing BLUE pancakes... So ladies and gents these blue pancakes make such a great dinner treat.... And of course there are no artificial colors making them this beautiful. So where does it come from?? No it's not the blueberries either! Take a look at the second photo for a hint.... That's right butterfly pea powder. The one I use is from a company called @rawnice and all of their products are delicious.

You can easily make your own pancake batter however I have also recently discovered @kodiakcakes makes a pancake mix where you can add water or milk. Today I added milk to these for a little more protein (yes you can use almond or coconut) and some chia seeds because.. Omega 3s and I am highly allergic to fish so it's one of the few ways I can get my hands on these omegas. 
They tasted really good and the texture was just as fluffy as a regular pancake. The pea powder to me... really doesn't add much taste more just nutrients and healthy color. In a smoothie the pea powder deff adds a little texture that may not be too everyone's liking but find out for yourself. Head on over to rawnice and try any of their products. Today I just want to show you guys this blue&purple galaxy nicecream bowl made using my favourite @rawnice superfoods powders! 🙆‍♀️ I get asked so often if these powders are actually healthy, because people just can't seem to believe that something healthy can also make such stunning colours 🤔. Well, let me tell you that it's possible! These powders are made from NATURAL INGREDIENTS such as sea weed, fruits or plants and each of them has its own benefits for our health 😄. @rawnice has written some info about each product on their website so, if you are curious head over there and find out more about these magical powders. GALAXY NICECREAM BOWL 💜
♡ 4 frozen bananas
♡ 1 + 1/2 tsp @rawnice blue spirulina powder
♡ 1 tbsp @rawnice pink pithaya powder
♡ 1 tsp vanilla extract

Blend the bananas until smooth (I use a food processor for that). Add in vanilla extract and blue spirulina powder and blend some more until the powder gets fully incorporated. Take out half of your nicecream and store it in the freezer. To the remaining nicecream add the pink pithaya powder and continue to blend until it gets incorporated and the mixture turns purple. Take it out, add it next to the blue nicecream, mix to create some swirls and serve with your desired toppings 😊😉.

VEGAN OMBRE CHEESECAKES by @laurastencel 🎂🎂🎂

Crust:

100 g Ritz crackers 
210 g Vegan Whole wheat biscuits 
1 Teaspoon Salt
1/2 dl Melted Coconut Oil
1 dl Almond flour 
1/2 dl Pecans

Place everything into a blender and blend until ingredients combined. Into a muffin pan add one spoon of the crust to be and use spoon or fingers to smooth down the crust, put into a freezer. Now make the filling.

Filling:
400 g Original Cream Cheese from Oatly
210 g Soaked cashew overnight 
Lemon zest 
Vanilla drops
Pinch of salt
2/3 Cup Maple syrup
1 Can of coconut milk (keep in the fridge overnight and use the cream don’t pour the milk)

For the colors:
Blue spirulina from @rawnice 
Butterfly pea tea also from @rawnice 
Juice out of 1 lemon ————————————————————
Into a blender add all the ingredients blend until smooth ! 
Into a cup add lemon juice and 1 spoon of butterfly pea tea and stir until it gets purple add half of the mixture into a blender, blend until it get light purple/blue-ish if you are not satisfied with the color add a little bit blue spirulina, pour 1/3 of the mixture into a muffin pan. Repeat the process 2 more times.
