Olive Oil Ice Cream, it is a combination that doesn't sound quite right but tastes so right! The floral and fruity notes of a good Extra Virgin Olive Oil pair beautifully with the cream, accompanied by a Parmigiano crisp for that classic salty and sweet combo, yums!
Like wine, there are different varieties of olives that gives a myriad of flavours, we use Arbequina because its strong floral and fruity notes go so well in ice cream!

Dinner for one last night (Himself is in Lisbon all week), this is another one from Nigel Slater’s wonderful book ‘Greenfeast’ - halloumi, tomatoes. I left out the rosemary, I thought that was a step too far alongside the thyme. I added lemon zest and juice instead and I swapped olive oil for English cold-pressed rapeseed oil because I am crazy for it. It was utterly beautiful alongside a glass of Merinas organic old vine tempranillo. He had salt cod croquettes, rice and beans, and a beer, which I would also have loved. Not quite into peach season yet but I'm very excited to bring these grilled peach splits back this season. It's a lot of work doing everything from scratch - the caramel, crumbles, gelato, and whipped cream - but super duper worth it!
