#22 - Taiwanese Cabbage with Salted Shrimp and Pork Fat

I was planning on making Tonkatsu tonight but didn't have any eggs! I think we ate them all. So I had cabbage and pork and had to find something to make with it that I've never had before. Flipped through my Thai cookbooks and found these two recipes. The cabbage one was great. Smokey from the hot fat and the wok's hay, funky from the fermented fish paste, and crunchy from the cabbage that was blitzed in the wok for less than a minute. I fried the salted shrimp in the fat, so they got very flakey and crunchy as a result. The curry was your basic red curry paste pounded in a mortar and pestle and cooked in the wok with the pork after searing it in smoking oil. I had to keep putting water along the sides of the wok to keep it all from sticking and burning. A little bit of palm sugar to even out the pungent funk and spice of the paste and fish sauce to bring out the flavors of the garlic and shallots went in at the end. Kaffir lime leaves over top and serve with jasmine rice.

  • I am having so much fun experimenting with my @instantpotofficial. *** This pork stew turned out really well. I was able to create three different, very hearty meals out of about 2.5 pounds of a pork loin from @costco. I cooked the pork in the instant pot with one @fronterafoods sauce pouch (the ground beef taco skillet sauce) and 10 ounces of #homemade chicken stock (that I made in the instant pot). *** Meal 1: Pork loin medallions with roasted root #vegetables (carrots, sweet potatoes, and gold potatoes) and sautéed green beans.

The leftover pork and liquid left in the pot from Meal 1 served as the base for Meal 2. *** Meal 2: This pork #stew. Tons of leftovers. I shredded the remaining pork from Meal 1 and set aside about two cups for Meal 3. The remaining pork went into the pot with cubed potatoes, a diced onion, 1-2 cups of frozen peas, and enough #chickenstock to cover the potatoes. (I think I used the rice setting on the IP). *** Meal 3: Shredded pork quesadillas with homemade #guacamole, and a side of rice with peas. *** If you suffer from #chronicpain or another #chronicillness that leaves you with little energy, consider an Instant Pot. It’s magic. All three of these meals took about 5 minutes of prep time each, primarily from chopping vegetables.
