One of our current petitions, launched in February is hoping to pressure restaurant chains such as McDonalds, Pizza Hut, KFC and Maxims to offer vegetarian options and work hand in hand with fellow citizens to reduce meat consumption and carbon footprint for the sake of the planet.⠀

Um die Nachfrage abdecken zu können, muss (wie so ziemlich überall heutzutage) mit Gift nachgeholfen werden. In der Vegetationszeit wird Baumwolle rund 30 mal Gespritzt und unter katastrophalen Bedingungen angebaut. Nur 15% der Weltweiten Baumwolle kann als nachhaltig bezeichnet werden. Für 1 kg #baumwolle werden 11.000 Liter Wasser benötigt! Auch bei der Baumwolle ist die Biene von Bedeutung, denn durch ihre Bestäubung erhöht sich der Ernteertrag um bis zu 60% 🐝 ——

Red beets attribute their vibrant red color to a unique group of antioxidants called betacyanins. These antioxidants have the ability to neutralize harmful and damaging molecules called free radicals. Certain free radicals cause oxidative stress that can be hazardous. The stress causes damage to key cellular structures such as DNA, cell membranes, or proteins. These uncommon antioxidants have garnered the interest of the science world where they are being researched for protection against oxidative stress related disorders.⠀
The unique antioxidants, betacyanins, were once thought to be similar to anthocyanins, the dark pigments found in grapes, but were later proven to have very different structures. While these antioxidants may be similar in color, they are structurally very different and the two have never been found in the same plant.⠀
Along with these antioxidants red beets also contain naturally occurring betaine and nitrates. Two compounds that are the reason red beets and beet juice is also being studied for possible support of cardiovascular health and for energy.⠀

⋒ SPAGHETTI BEAN BALLS ⋒
If it’s a gloomy day or things are simply not going your way, spaghetti meat balls (or in this case bean balls) are bound to make you feel happy, content and cozy. Pasta = love.
When we moved into our van we decided to go vegetarian for a plethora of reasons - it’s cheap, we have no hot water (meat is messy), it’s good for the planet, and it’s easy to store in a van. Over the past couple of years we have found a substitute for everything and are now pretty much plant based. It’s been a lot of fun experimenting and recreating all our faves and turning them vego or vegan. One substitute we are grateful for discovering is spaghetti bean balls, because who doesn’t love a good pasta feed.

Red kidney beans, when combined with a whole grain such as rice or pearl barley, provide a virtually fat-free high-quality protein. In addition to providing protein and slow burning complex carbohydrates, kidney beans can increase your energy by helping to replenish your iron stores. Iron is an integral component of haemoglobin, which transports oxygen from the lungs to all body cells, and is also part of key enzyme systems for energy production and metabolism.
Like most beans, red kidney beans are a very good source of soluble and insoluble fibre. Soluble fibre forms a gel-like substance in the digestive tract that binds with bile (which contains cholesterol) and ferries it out of the body. Research studies have shown that insoluble fibre not only helps to increase stool bulk and prevent constipation, but also helps prevent digestive disorders like irritable bowel syndrome and diverticulosis.
1 cup of red kidney beans may contain up to 1/4 of your daily requirement for thiamine, responsible for energy metabolism and is critical for cognitive function. Thiamine is needed for the synthesis of acetylcholine, the important neurotransmitter essential for memory. A lack of acetylcholine is a significant contributing factor in age-related impairment in mental function and Alzheimer's disease (which is clinically characterized by a decrease in acetylcholine

Breakfast! I usually really dislike tofu scramble but it was really good this time around. Come to think of it, I haven't made it since we started using medium tofu instead of firm! Maybe that's the difference!! Anyway, I made tofu scramble with onions and peas (I love peas, let me be) and then made some potatoes the way @plantbasedamazonian taught me how 😍😋 YUM. This was a super good breakfast and I kinda wanna make it again tomorrow 😅
