2 huevos 🥚🥚
2 cucharadas de edulcorante 🥄granulado Swerve (Yo uso Monk Fruit 1/2 cucharada)
1 cucharadita de extracto de vainilla
½ taza de mantequilla, cortada en cubitos pequeños 
2 cucharaditas de arrowroot
½ taza de harina de almendra
½ taza de harina de coco

Relleno:
1 ¼ tazas de azúcar granulada Swerve
1 sobre de gelatina sin sabor
¼ cucharadita de sal
1 cucharada de arrowroot
1 ¼ taza de agua
4 grandes yemas de huevo, batidas
½ taza de jugo de limón recién exprimido🍋
3 cucharadas de mantequilla
2 cucharaditas de ralladura de limón🍋

Merengue:
4 claras de huevo🥚
½ cucharadita de crema de tártaro
½ taza de azúcar granulada Swerve

1. Precaliente el horno a 350 grados. Combine todos los ingredientes de la corteza en un procesador de alimentos y pulse hasta que se desmoronen. Colocar la mezcla en molde para hornear y hornear durante 10-12 minutos.

2. Combine el azúcar, la gelatina, la sal y el agua en una cacerola y hierva revolviendo constantemente. Hervir 1 minuto y luego verter un poco en los huevos batidos para templar los huevos. Vierta la mezcla de huevo en la cacerola y cocine hasta que espese. No permita que la mezcla supere los 160 grados o no se ajustará bien.

3.Mezclar en jugo de limón, mantequilla y ralladura de limón. Retirar del fuego y dejar de lado.

4. Bate las claras de huevo y la crema de tártaro en un tazón a baja velocidad hasta que se vuelva espumoso. Agregue el azúcar lentamente y continúe batiendo hasta que se formen picos rígidos.

5. Vierta el relleno caliente en la masa de la tarta y cubra con merengue. Asegúrese de que los bordes estén sellados y amontone merengue adicional en el centro.

6. Hornee por 30 minutos o hasta que el merengue esté ligeramente dorado. Deje enfriar por una hora y luego refrigere por 3 horas para permitir que el pastel se ajuste completamente.
