Ingredients:
1. 1/2 cup coconut oil, softened 
2. 5 dates (blended with couple tbsp hot water to make paste)
3.  2 eggs (if vegan, use 1 tbsp chia seeds or flaxmeal mixed with 2.5 tbsp water (let it sit for 5 mins to activate) for every 1 egg substitution) 
4 . 2 large ripe bananas 
5. 1/4 cup almond milk or any other milk 
6.  2 tsp baking soda
7. 2 tsp vanilla extract 
8. 1 3/4 cups gluten free flour blend or any all purpose flour of your choice (I used a mix of my rice flour blend and favabean flour)

Coconut whipped cream:
1. 1 can (14oz) Thai kitchen coconut cream (chilled in fridge overnight) only use the cream part and save liquid for smoothies :)
2. 1/2 cup (or more for extra sweetness) pure raw date sugar (just dates in the ingredient list)
Mix both ingredients in a bowl and mix on high with a handheld mixer until peaks form. 
For the cake: Preheat oven to 350 degrees. Line cake pan with parchment paper and spray with coconut oil spray. In a large mixing bowl, beat the coconut oil and date paste well. Then add all the remaining ingredients to the bowl and mix thoroughly. Pour into the cake pan and bake in the oven for 18-20 (13-15 mins for mini cupcakes) or until toothpick inserted comes out clean. (Don't over bake to avoid dry cupcakes/cakes.) Cool completely before spreading coconut whipped cream on top. Freezes well too. Misture tudo em fogo baixo sempre até desgrudar do do fundo da panela, coloque em um prato e leve à geladeira até esfriar bem.

  • New breakfast bake recipe headed with @tindol to work this morning! I decided to try something different instead of a frittata! Definitely would be a great add for all those doing #whole30

Breakfast Bake:
- 1 lb bag of hash browns

- Veggies: I used 1 green bell pepper and about 2 handfuls of spinach. Feel free to get creative!
- Directions: Preheat oven to 350 and spread out hashbrowns on a greased 9x12 Pyrex. Cook bacon/sausage in pan and prep the veggies. Once your protein is cooked through add your veggies and sauté for about 5 min. Spread out mixture as a next layer on your hashbrowns. Mix the eggs and coconut cream and pour on top of breakfast bake. Season with S&P. Bake for 40-50 min or until sides are golden brown!
