This keto mug cake by @nadiaeves is keeping us warm this winter. How about you?

@nadiaeves Keto choc mug cake 🍫 
This is the ultimate dessert for those short of time or needing to curb those after dinner sweet cravings.
Ingredients:
1T melted butter 
1-2T @nourishandthrivenz erythritol 
1 small egg 
1t vanilla extract 
1T coconut flour 
1T cacao powder
1/2t baking powder 
1T @nourishandthrivenz 70% choc chips or a few squares of sugar free chocolate.

Method:
-Combine butter, erythritol, vanilla and egg in a mug and beat with a fork until well combined. -Add in flour, cocoa and baking powder and fold in. Mix until there are no lumps. Top with chocolate.
-Place in a microwave on high for 45-60 seconds. Make sure you do not over cook as it will be dry.   • My go-to appliance these days has to be a multi-pot or pressure cooker.  It’s so versatile and the cooking times are great for meal prep.  I had the pleasure of trying out a new one this weekend from @cuckoo_america .  Cuckoo is known for having one of the best quality rice cookers, so I was excited to try their version of a multi-pot.  I have to say, I was really impressed!  I cook with the instant pot, so all my comparisons are to that.  The biggest thing I noticed was the pressure release valve.  The Cuckoo does this automatically so you don’t have to worry about releasing or possibly burning yourself as I may have done before 😂. I also liked the pot itself, it was non-stick and more heavy duty.  There’s a ton of functions but it also includes a slow cook feature which I’d love to try next time.  The only thing that might take a little experimenting is the cooking time.  Even though it’s automatic, the instant pot comes with some more exact cooking times.  Overall, it made this delicious lunch a breeze!  Super easy to use and great quality.

  • Had to get on the @erinliveswhole cake cake cake 🎂 batter balls train! 🚂 I knew Hope would love these and not goin to fib I definitely wanted them too! 🙋🏻‍♀️😋 We changed up the recipe a smidge because for the life of me I can’t stick to recipes! 🤦🏻‍♀️ But you definitely should check out her original recipe!!! 🍰🥜🙌🏼
Here’s what we did:
1/3 Super Butter Peanut Cashew Butter @wild_friends 
1/2 coconut butter (can add a lil more for a firmer fudge) @artisanaorganics 
3-4 dates 
1 tablespoon honey 🍯 
5/8 cup of Warm Cinnamon Oat Cereal @kashi 
Dash of apple pie spice @primalpalate 
Process in food processor. Set mix in fridge for about 45-60 min. Then using a tablespoon or ice cream scoop roll into balls. Dip in rainbow sprinkles!
