Had the chance to be in a test group to try @tapestry_restaurant pho. .
For a Large Pho I believe you could get it for $8.95 and for an additional $5, you can add a beef short rib. .
The pho with the short rib was super beefy and fatty, in which I absolutely love! In my unbiased opinion, with the beef bone, it was a great amount of broth, to protein, to noodle ratio. in my biased opinion, I love beef flank, its fatty, adds more flavor, and regardless of the flank, it probably wouldn't hurt adding more meat to the bowl if it came without the short rib.
One BIG thing that was missing in this pho that a lot of pho have and is a MAKE IT OR BREAK IT and deciding factor for me, was the herb taste. It was definitely missing the Anise Seed - Fennel Seed - Coriander Seed - Cinnamon - Clove - Frctus Amoni flavors to it.
Overall, (3.5/5). If the herbs are corrected that's an easy 5/5 for me!
