  • Happy #muffinmonday ! 🎉 Easter might be over but the carrot cake recipes continue! 🥕 I hope everyone had a great weekend and a happy Easter if you celebrate it! 🐰🐣. I spent mine enjoying the nice weather with a new friend and eating most of these muffins 😋. •
Carrot Cake Muffin #dEATs: 
2 cup oat flour (I blended whole oats into flour) + 3 tbsp coconut flour + 1 tsp cinnamon + 1 tsp ginger + 1/4 tsp nutmeg + 1/2 tsp baking soda + 1/4 tsp salt + 2 eggs + 1 tbsp coconut sugar + 3 tbsp maple syrup + 2/3 cup unsweetened apple sauce + 1/4 cup melted coconut oil + 1/2 cup grated carrots. •
Directions: mix together all dry ingredients in a bowl. In a separate bowl, whisk together the eggs and stir in the coconut sugar. Once mixed, pour into the bowl of dry ingredients. Add the remaining wet ingredients and mix together. Lastly, fold in the shredded carrots. Divide into muffin pan and bake at 350 for 20 minutes. Makes 7-8 muffins. •
Originally, I was going to add a frosting to them as well but they’re honestly so moist and sweet enough without anything else!
