  • Shrimp and Pesto #zoodles 🙌🏼🙌🏼🙌🏼 an absolute winner all around! Served with some sweet heirloom cherry tomatoes and chunks of parmigiano reggiano. 👌🏼 I went all out and made the pesto and zoodles from scratch but there are many options to make this meal super easy and accessible to anyone!

TIP- I made my own vegan/dairy free pesto which had walnuts to replace the parmigiano cheese. Came out so smooth and creamy. You can find really good regular or vegan pesto at a local grocery store as an alternative to making your own.
TIP- I happen to have a #spiralizer at home and made my own zucchini noodles. You can also find pre-spiralized zoodles at many grocery stores nowadays because of the high demand for gluten free options. I prefer making my own because 1) it’s cheaper and 2) there’s no packaging waste.
TIP- Chicken would also be a great substitute if you or bébé are not fans of shrimp.

🍽 Sauté shrimp in olive oil, season with salt and pepper, and remove from pan when cooked. Add additional olive oil to pan and lightly sauté spiralized zucchini noodles. Squeeze lemon juice over and season with salt and pepper. Add pesto sauce to pan and mix to incorporate into the zoodles. Add shrimp back in and serve.
