  • last couple months in college sooo gotta live that ramen life right? well maybe not your average package ramen dinner..! bc personally have never been a big ramen person (as in I have never actual had ramen..🤷🏼‍♀️) but since I feel like it’s a thing to do in college, and it seems to becoming all the rage here these days with specialty restaurant these days, I felt I needed to give it goo myself. I picked up @nonalimfoods fresh ramen noodles at Whole Foods & played around with some thai ingredients to make my own version of ramen. and wow this dish blew away my expectations. it had sooo much flavor && the bf tried it and said it was delish and tasted just like ramen but healthier without all the sodium, sugar, unhealthy fats & who knows what else comes in those little packages. we want to find a good upscale ramen place to try a more authentic version soon so anyone got recommendations in the Bay Area???

will settle for this homemade ramen for now though and once i will try it again I’ll add full post to the blog but for now I’ll add what I did yesterday cause this needs to be in your life.

sauce: (for one)
•sautee chopped shallot and 1/2 tsp fresh ginger in drizzle of preferred (I used grapeseed) few few mins; add 1 tsp thai red curry last, 1/3 cup coconut milk, 1/3 cup broth (I used @bonafideprovisions), 1 tbsp soy, 1 tb fish sauce bring to boil then reduce to a low/simmer for 10 - 15 mins while stir fry veggies & cook noodles
• in separate pan I sautéed spring veg asparagus, broccolini, sweet red chili peppers & sprinkled on the Trader Joe’s chili lime seasoning. I add also purple cabbage and shrimp in last few mins. •the fresh ramen noodles took only a min to cook in boiled water (and were delicious - high key recommend the @nonalimfoods noodles f you can get some. I got mine at Whole Foods!).
•add noodles and stir fry to sauce pan and mix it altogether, finish off with fresh cilantro & cabbage all you have yourself a delicious and nutritious thai inspired ramen dish😍

  • Red Thai curry soup with chicken, green pepper and baby corn

Made this one using @bluedragon red Thai paste and it tastes unreal!! Ingredients 
1 spoon coconut oil 
1/2 jar red Thai curry paste 
1 red onion (chopped)
3 cloves garlic (minced)
1 chilli (chopped)
1/2 pack baby corn (chopped)
1 green pepper (chopped)
2 chicken breasts (chopped)
1 Tin Coconut milk 
1/2 lime 
1 splash fish sauce 
1/4 pack Coriander (chopped)
Chilli power (optional)

Method

Fry the coconut oil in a large pan on a medium heat and add the onion. In 2 minutes add the garlic and chilli. Add the Thai paste and 2 table spoons of water and cook for another 2 minutes. Add the chicken and cook until sealed then add the green pepper and baby corn and put the lid on to steam them. After 4 minutes pour in the coconut milk and stir it in. Bring down to a simmer then season with salt, pepper and chilli powder. Add a splash of fish sauce and the juice of half a lime and stir. Finally add finely chopped coriander and simmer for 5 more minutes before serving in a bowl. 6 cloves garlic, minced
¼ cup honey
¼ cup water
2 tablespoons rice c vinegar
1 tablespoon soy sauce

Instructions:

1. Season chicken with salt, pepper and garlic powder; set aside

2. Heat a pan or skillet over medium high heat; sear chicken thigh fillets on both sides until golden and cooked through

3. Reduce heat after searing on both sides, cover skillet with a lid and continue cooking until the chicken is cooked through, while turning every 5 minutes until done. Drain most of the excess oil from the pan, leaving about 2 tablespoons of pan juiced for added flavor

4. When chicken is done and cooked through, add the garlic between the chicken and fry until fragrant (about 30 seconds). Add the honey, water, vinegar and soy sauce. Increase heat to medium-high and continue to cook until the sauce reduces down and thicken slightly

On my lunch break, I used to drive 3 minutes down the street to the Golden Arches. Like clockwork, I’d creep up to the drive thru, look around to make sure I didn’t know anyone, and order the #2 value meal with a Diet Coke.

I’d get my brown, grease-covered bag filled with TWO cheeseburgers and a large fry, then pull into an open parking spot and devour every last bite. I didn’t feel anything but comfort eating it ... but I felt a tremendous amount of guilt as I walked back into the gym. Chicken, broccoli, and rice was the standard for most of my employees - and there I was hiding that I demolished the equivalent of two [unhealthy] meals in a matter of 5 minutes.

“What’d you have for lunch?” they’d ask. “Oh, you know — just a salad...” I’d reply and quickly get back to business helping OTHER people change their lives.

Food wasn’t FUEL to me five years ago, you guys. It was comfort and convenience. Or it was a DIET with tons of restrictions and/or cutting food groups out. #truthtalk

Food IS fuel, though, babes. And my biggest piece of advice for those wanting to make changes?! Learn about food groups, why your bod needs them, and KEEP IT SIMPLE. ✌🏼💕 CONFESSION TIME: .
