Today’s recipe features an aromatised wine-based aperitif called Byrrh (pronounced Beer!) as they’re next on the #MixMannVermouth history series! Like Bonal featured last week, #Byrrh is a #Quinquina aperitif

Created by brothers Pallade & Simon Violet, textile & wine merchants, who eventually settled in Thuir, France to open up shop in 1866. Simon used his deep knowledge of wine to create his “Hygenic Tonic #Wine with Cinchona”, like others of its kind it claimed health & restorative qualities. They had to drop the word cinchona (quinine) due to objections from jealous pharmacists due its sales success

By 1866 production moved to the legendary Caves Byrrh famed for one of the Worlds largest oak Vats, able to hold over 1m litres, it took 15 years to make – that’s a lot of Byrrh! Indeed it was needed as by 1910 they were the leading #Quinquina producing 30m litres per year!

Sales declined after the effects of Prohibition & WW2, by 1961 CDC took over (also had Dubonnet & Cinzano in their portfolio). By 1977 Pernod took over Byrrh. Interesting fact: today Caves Byrrh also produced #Suze, Dubonnet, Pernod Absinth & more!

Byrrh is a sweeter, fruitier & full bodied in style with a blend of grape mistelle, dry Red Roussillon wine and mix of botanicals including coffee, cocoa, orange. This makes for a gentler quinine bitter note in a Negroni, or an intriguing MixMannhattan!

BYRRH MANHATTAN :
60ml doorlys.uk XO Rum
45ml Byrrh Grand Quinquina aperitif
10ml Fairdrinks Café Liqueur
5ml cherryheering1818 cherry brandy
2 dash  Pineapple Star Anise Bitters

Combine all in a mixing glass half filled with ice, stir well for 45 seconds, double strain into a chilled coupe. Optional Garnish – Maraschino Cherry & Orange Zest

This delivers a rich flavoursome drink with subtle coffee cherry finish, perfect for #cocktailoftheday too!
