Did someone say lasagna?! This veggie lasagna with cashew cream sauce is so so good 😛 it’s quick and easy to make, and perfect for leftovers for lunch! The #cashewcream gives a light and fluffy taste which makes it super delish!
1 cup cashews, 1tsp water💧, 1 package tofu, 1 tsp salt, 2 tsp garlic, 1 tsp pepper, 1 tsp mustard seasoning, 1 tsp celery salt, 1 tsp parsley, 1/2 tsp olive oil
Place all ingredients into the blender and blend to a #ricotta like consistency. Season to taste as needed. .
3 cans tomato 🍅 sauce, 2 squash, 2 zucchini’s, 1 can diced tomato w/ green Chile’s, 1 1/2 cup mushrooms🍄, 1/2 cup onion, 1 tsp parsley, 1/2 tsp rosemary, 1 tsp fresh garlic (minced), 1/2 tsp salt, & 1/2 tsp pepper. Dice all veggies and simmer all ingredients in a pot for 20-30 minutes.
Preheat the oven to 375 degrees. Place olive oil on the sides of the pan so the lasagna won’t stick. Place just enough water to make a thin layer in the bottom of the pan. Layer sauce, uncooked lasagna noodles, cashew cream, more sauce...repeat until filled. Bake with foil on top for 25 minutes, remove foil and bake uncovered for another 25 minutes. (For a crispier top, broil on high for an extra 5-10 minutes!) .
Let it cool, then enjoy! .
I dreamed we made a decadent duck dinner last night, with the most luscious duck breasts, deliriously crisp/succulent drumstick confit, duck fat pan-roasted potatoes, and duck fat sizzled Brussels sprouts. Oh, and, just because, steak tartare to start.
Then I woke up to find a jar of creamy white duck fat in the kitchen and knew it wasn't a dream after all and we can do it all again. 🥰
