What’s one unique thing about yourself?
As I’ve gotten older I’ve learn to truly embrace myself for who I am everything from my sense of humor to my uneven hips (due to my scoliosis). Yeah, there are things we might not always love about ourselves, because they’re “different”, but that’s the beauty in what’s makes us who we are, embrace your individuality! Life is way too short to pick apart ourselves, own what you got and who you are! .

Trying to eliminate dairy from my diet and it’s going really well as you can see from this cheese quesadilla! 🧀🙃 couldn’t decide what I wanted for lunch so I made a quesadilla and then decided to add ham and spinach and guacamole so I’m not sure if it was still considered a quesadilla 😂 these are the low carb wraps but my new obsession is the BFree wraps from Publix! They’re gluten and dairy free and come in different kinds! My favorite is the sweet potato wrap 😍 definitely worth trying!
All the sweet and savory flavors for dinner tonight 😉 I made pulled pork in my Instant Pot and while that was pressure cooking I steamed some Brussels and pan seared some bacon to make bacon Brussels 🥓 after I cooked the bacon, I seared the Brussels in the bacon fat to make them extra flavorful and crispy 😍👏🏼 I also had some leftover asparagus that I meal prepped yesterday. A little sweet, a little savory and a whole lot delicious 🥰 hope you all enjoy your Monday night! I’ll be cozying up to watch Bach later 🌹

After a particularly difficult week, I am back to posting a bit more regularly starting today.
You know when you’re in some sort of funk and it seems like nothing can go the way you want it to go? It was one of those weeks. As in, every day I found a challenge and a situation that pushed me off the tracks.
Then I realized it’s all about mindset and about how YOU deal with the curveballs.
I read the story about a family who is fighting a very intense battle [go to @jennakutcher to see more] and I can’t stop thinking about them. And can’t stop thinking about the fact that, as cliché as it sounds, I was taking many things for granted.
I am thankful for the family I have, for the friends that I chose, for the beautiful place I get to live in, and for being able to be creative every single day.

Greek grilled salmon tzatziki brown rice bowl with sautéed red pepper and zucchini and cooling grape tomatoes, kalamatas, and cucumbers. Long intro for a “super bowl” that has all the sides included. I used Gaby’s tzatziki recipe because it’s the best tasting and healthiest I’ve ever had. You won’t be sorry you tried this....I promise!
It’s been a week of chocolate and sweets so I figured it was time to post something savoury! Not just savoury but something warm, luscious and comforting as we’re still in the depths of winter and we could all use a warm hug in a bowl! And that hug comes in the form of Creamy Mushroom Soup from @thepioneerwoman.
This soup is exactly what you’re looking for in a mushroom soup, maximum mushroom flavour! I use creminis (or baby bellas) and mushroom stock to really drive the point home! And it only uses a half cup of heavy cream making this less of a once in a while indulgence and more of a weeknight staple! I still think about the grilled turbot I had on my trip to Spain last year. So simple but so perfect. Here’s another video from my tour around Costa Brava and Spain for the #kitchenbridgeprogram. Such an incredible trip being able to see what the chefs out there are creating and how they’ve mastered cooking with Mibrasa. Having the opportunity to go around and visit the chefs using these ovens was an incredible learning experience, something that I was able to take back with me to @charcoalvenice to ultimately create better, more delicious dishes using their ovens.

MEAL PREP! Is it something you guys do every week? Or something you struggle with? 🍍Green Pineapple Smoothie Bowl

Smoothie bowl Sunday time! Experimented with a random recipe this time & I gotta say, it’s probably one of my favorites now. It may be Fall for some of you guys out there but it’s currently mid 80s with super sunny skies here in Texas, so aka 90 degrees & humid. So green tropical smoothie it is for breakfast👌🏼
▫️1 Frozen Banana
▫️1/4 cup Frozen Mangos
▫️1/3 cup Frozen Pineapple
▫️Small handful of Spinach
▫️3/4 cup Coconut Water (@vitacoco)
Blend everything together & top with frozen pineapple chunks, shredded coconut, & hemp seeds.
