  • Not a bad way to start off Monday with some fluffy stack of pancakes.

I have some exciting news today.The blog is live! @wonderandcharmblog is now officially up.

When I first started doing food photography. I never thought of starting a blog, I am not the world’s greatest writer. But the more I kept taking photos of other people’s recipes it made me want to try creating my own. My twin sister Marissa already knew when she started doing photography she wanted a blog. So, when she asked if I wanted to be a part of it, I did not know wanted to do. I kept going back and forth, but I realized the recipes I have been creating I wanted to share too. And that is when it began. My sister and I have put together the recipes we have created together and started brainstorming ideas. We have put a lot of work and heart into this blog we can’t wait to share more recipes.

  • Happy Easter friends! 🌸 Spring time, Easter egg hunts, brunch, family, Easter baskets, bunnies, and chocolate...some of the many things that make this holiday so joyful. But most of all, the renewed faith and hope emulated by this season is what makes it most beautiful to me. Christ’s resurrection has redeemed our souls and given us the opportunity for new life and hope, not just today, but every day of our lives. Coincidentally, I love that Easter coincides with the season of spring, which can also be seen as a time for growth and redevelopment. With that said, hope you all had a beautiful Easter day 😊🐰 The recipes for carrot cake 🥕(pictured) and roasted red potatoes 🥔 (on my story but not pictured here) are posted down below! .

🥕Carrot Cake (dairy free, except for the frosting) from @buzzfeedtasty: so this recipe was very moist but didn’t have the same texture as a classic fluffy cake recipe. It still tasted great and had the perfect balance of spices!
-For the cake: Group wet and dry ingredients into batches and whisk in separate bowls. Then add dry ingredients into wet and mix until no lumps. Add grated carrots and raisins. I equally separated the batter into 3 springfoam pans so I could make a tiered cake with frosting in between. Directions call for 350 degree oven and 35 minutes, but I found it to be more like 375 for 45 minutes. Just poke with a toothpick to double check if it’s cooked through! -3.5 cups @bobsredmill all purpose flour
-1 cup brown sugar
-1.5 tbsp baking powder
-1 tbsp each of baking soda, nutmeg, & cinnamon -Pinch of salt
-3 cups almond milk
-3/4s cup melted coconut oil
-1 cup apple sauce -3/4 cup maple syrup
-1 tbsp vanilla extract
-1 tbsp apple cider vinegar
-2 cups finely grated carrot (I would add 1 more cup next time) -1 cup of crimson raisins (I’d add another here too)
-1/2 cup walnuts for garnish -Once cakes are cooked and cooled, add frosting (do not try adding frosting when warm). Making the frosting was the easiest part: 3.75 cups of powdered sugar, 8 ounces of cream cheese, 1 stick of butter, and 2 tsp vanilla extract. I mixed in a food processor until smooth and velvety.

⏲ 20 min Prep Time | Makes 4 Patties
Made these burgers last night & you BEETya they were finger lickin’ good!! 😋 It may have fallen apart halfway through...but I wasn’t even mad bc they were DELICIOUS 🤤 Plus, I used the new Chickpea Banza Rice & it worked VERY well 🍚 My coworker found this recipe by @thekitchn & sent it my way. I tailored it to my liking & am now sharing it with y’all 🙌🏼

▫️2 medium Red Beets
▫️1/4 cup Chickpea Rice (@eatbanza)
▫️1/2 small Onion, diced
▫️1 Jalapeño, diced
▫️3 cloves Garlic, minced
▫️1 tbsp Cider Vinegar
▫️2 tbsp Whole Wheat Flour (@bobsredmill)
▫️1 can Black Beans, drained
▫️1 tbsp EVOO
▫️Spices - Smoked Paprika, Chili Powder, Cumin, Salt & Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven to 400°. Wrap your beets in aluminum & roast for about an hour.
Meanwhile, cook your rice. The recipe said to cook for 35-40 mins! 😱 But with the Banza rice, it only took ~10 mins.
While that’s cooking, add your diced onions & jalapeños to a pan with avocado oil (higher smoke point). Cook for ~10 mins, they should start charring a bit. Then add in your garlic & cider vinegar. Cook for another 5 mins.
In a mixing bowl, add in half your drained beans & use a masher to mash them. Then add in the remaining whole beans & evenly mix.
Peel the skin off your beets. Use a grater to grate them & add to the bowl.
Add in your cooked rice, veggies, the EVOO, the spices, to taste & the flour. Mix everything well. (The og recipe called for an egg to help bind but I left it out to make these vegan).
Then cover the bowl with plastic wrap & refrigerate for a few hours.
Once you’re ready to cook, separate into 4 disk shaped patties. Add to a cast iron with some avocado oil & cook evenly on both sides. About 4-5 mins each side. I let mine get nice & charred 🤤 Freeze the patties for future eatings!
👉🏼 To serve - a GF bun (@udisglutenfree) with mashed avocado, ketchup, beet patty, sliced vegan cheese, tomato, onion, spinach & avocado oil mayo (@chosenfoods) in between 🔥

  • 🌮 “Beef” Quesadillas w/ Guac
⏲ Under 20 mins | Serves 3-4
Haven’t made these quesadillas in a while but thought it was about time! 😋 These never disappoint & are soo filling🤰🏽Would you have EVER thought of putting cauliflower in quesadillas⁉️ Sounds absurd but tastes DELICIOUS 😍

▫️2 Cassava & Chia Tortillas (@sietefoods)
▫️1/2 cup Cauliflower Rice (@greengiant)
▫️1/2 cup Black Beans
▫️1/4 Onion
▫️1 Jalapeño
▫️Sweet Corn
▫️Mexican Shredded Cheese (@kraft.naturalcheese)
▫️1 tbsp Soy Sauce (@kikkomanusa)
▫️Spices - Cumin, Chili Powder, Smoked Paprika, Garlic Powder, Salt & Pepper

Start off by using a food processor to pulse the black beans. Be sure to not purée & just slightly “chop” them. Set aside.
Next, add in the onion & jalapeño. Do the same and roughly chop them. Set aside as well. 
Cook the cauliflower rice according to the package instructions.
In a pan, cook the beans, onions, jalapeños, & cauliflower in some ghee (@bulletproof). Add in all the spices plus the soy sauce. Go crazy if you like it hot 🌶 (which I do). Mix it all together & after 2-3 mins, set aside.
Lay a tortilla in the pan, add in Mexican cheese, then the “beef” filling, then corn, some more cheese, & then finally top with the second tortilla. Cook on both sides until crispy!
In a small bowl, mash an avocado & mix in some lime juice & salt! For the salsa, I used the Organic Kale & Veg Salsa from @sprouts. So tasty! 😋
Serve the quesadillas with guac & salsa on the side with some fresh cilantro & topped with Habanero Hot Sauce (@sietefoods).

So this was my second attempt at making macarons & I gotta say...definitely more successful than my first try 😅 I still haven’t perfected the process but the taste is definitely there! 🙌🏼 Who knew making macarons could be so tough!? 😬 Toasting to the weekend with these yummy Matcha Macarons 🥂

Recipe📝
▫️1 Egg White, room temperature (@vitalfarms)
▫️1/4 cup Granulated Cane Sugar
▫️1/4 cup Almond Flour (@natureseats)
▫️1/3 cup Powdered Sugar
▫️2 tsp Unsweetened Matcha Powder (@ujidomatchatea)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Chocolate Filling:
▫️1 cup Dark Chocolate Chunks (@wholefoods)
▫️1 tbsp Coconut Oil (@vitacoco)
▫️2 tsp Choice of Flour (I used Chocho Powder by @fivesunsfoods)

In a mixing bowl, add in your egg whites. Use an electric mixer to whisk. Then slowly add in your cane sugar as you continue to whisk. It should create stiff peaks when you lift up the mixer (still working on perfecting this 😬).
Using a sifter, add in your flour, powdered sugar & matcha. Slowly sift out the mixture to ensure the flour has no chunks (this process took me a while).
Then slowly fold in the flour into the egg mixture, making sure there are no lumps. Add the batter to a piping bag.
Preheat oven to 300°.
On a parchment-lined baking dish, pipe out dollop sized circles, leaving some distance in between (you may need two dishes). Let it sit for 30 mins to an hour. You’ll know it’s ready to bake once the tops are dry to the touch (mine took closer to an hour).
Once the batter is dried, pop the baking dishes into the oven & bake for 15 mins.
Meanwhile melt your chocolate in a bowl with the coconut oil in the microwave. Add in the flour to thicken it up. Then add the chocolate filling into another piping bag.
Once the macarons have baked, pipe on the chocolate filling onto a macaron & sandwich it with another. Bite & enjoy!
