  • Today I gave @everylastbite a try and made these Mexican Eggs Benedict. The recipe did not disappoint!! In fact, it’s a keeper and will be served for brunch when my next set of guests arrive. The combination of lime and chipotle in the hollandaise sauce tantalizes your taste buds, leaving you wanting more. Very easy to make, here’s what I did…. Mexican Eggs Benedict. Serves 2
1 butternut squash
1 Tbsp oil
1 large avocado (smashed with a fork)
2 chorizo sausages (remove from casing)
4 eggs (2 eggs/pp)
1 jalapeno

Chipotle Lime Hollandaise 
2 egg yolks (room temperature)
1/4 tsp sea salt
1 Tbsp lime juice 
1/4-1/2 tsp chipotle pepper
1/4c melted ghee or grass fed butter

Directions 
PEEL butternut squash and cut the long neck into slices, approximately 1/2”-3/4”thick. Brush both sides of the squash with oil and cook in fry pan or oven. I used 350F oven, 8-10 minutes/side till squash was tender.

FRY the ground chorizo in a pan, removing the meat from its casing and breaking the meat into a crumbly texture.

TO make poached eggs use your favourite recipe. I’m not good at making poached eggs with just water, so I use silicone cups. Cook eggs for 4 minutes (or 5 min if you have large eggs) for the perfect soft poached egg.

TO make Hollandaise sauce use either a tall narrow container (with immersion blender) or a small blender.  While eggs are cooking blend egg yolks, salt, lime juice, & chipotle pepper for 30 secs. Melt ghee/butter & SLOWLY add the HOT butter to the blender while continuing to blend. If by chance you need to reheat the sauce, do so very very gently on lowest microwave setting because the sauce cooks and gets lumpy very quickly. 
ASSEMBLE by placing 2 butternut squash slices on a plate, top each with mashed avocado, some chorizo meat, a poached egg, and spoon the hollandaise sauce overtop. Garnish with jalapeños before serving.

  • A while back I read a mantra from @melissaambrosini that stuck with me. In fact it resonated with me so much wrote it down and put it on my fridge.➡️ “I honor my temple and treat it with love and respect. I do not eat when I’m feeling sad, stressed or overwhelmed.”💗

This quote has helped me so much, especially after becoming preggy. Yes, I’m human and I still cave to my cravings but my body always reminds me that it wasn’t the best of ideas!🤷🏻‍♀️ Now, I’m eating food for two. I need to eat food that is nutritious for myself and my growing bubba! Healthy me + healthy placenta = healthy baby!👶🏻

I don’t have to restrict myself either! There are so many healthy ways to enjoy my favorite snacks! I’m constantly learning and improving my diet/lifestyle!🍩🎂🍕🍫

This morning I wanted a donut, but I live in the sticks and need to learn how to make gluten free donuts (any recipes are welcome) so instead I’m munching on a three egg omelette loaded with peppers, onion, mushrooms turkey and cheese. With a side of strawberries, blueberries and Greek yogurt sprinkled with pumpkin pie spice!❤️

Caving to cravings isn’t bad! But you gotta make sure you’re getting your nutrients too! Thanks to my coaching business and all the learning I’ve done over the last 2 years I feel like I’m finally finding a healthy balance! The more I learn the more I am able to help my family and all of you!🙌🏻

In fact it resonated with me so much wrote it down and put it on my fridge.➡️ “I honor my temple and treat it with love and respect. I do not eat when I’m feeling sad, stressed or overwhelmed.”💗 . This quote has helped me so much, especially after becoming preggy. Yes, I’m human and I still cave to my cravings but my body always reminds me that it wasn’t the best of ideas!🤷🏻‍♀️ Now, I’m eating food for two. Pancake day is on the 5th of March this year FYI 🙌🏻 But to be honest, I’m planning on multiple unofficial pancake days waaaay before then, and after! 😂 Does being gluten free or dairy free make a dent in your pancake day? Because I find that my gf/df crepes always turn out just like regular muggle ones and nobody would ever know the difference!

Also when we talk about pancakes, what are your favourites... crepes OR a fluffy stack of American style pancakes?! I’m forever #TeamCrepe but that’s just because of the nostalgia... I don’t think I ate fluffy American pancakes till I was about 20 🤦🏼‍♀️ I’m just a lemon and sugar crepe girlie!
