🥐2 yemek kaşığı zeytinyağı
🥐1tatlı kaşığı tuz
🥐1çay kaşığı şeker

🥐3su bardağı un.( Yarı yarıya tam buğday unu ile yaptım)
İÇİ İÇİN: 🧀Lor peyniri
MANTOSU İÇİN:: 🌽Yeterince mısır unu
hamurumuzu hafif ele yapışacak şekilde yoğurup hazır edelim mayalanması için 40 dakika kadar ağzı kapalı olarak ılık bir yerde bekletelim. Hamurumuzu birkaç turda yoğurarak gazının çıkmasını sağlayalım, mandalina büyüklüğünde parçalar kopararak elimizle hafifçe bastıralım. Ortasına lor ekleyelim (arzu eden başka iç de kullanılabilir) kapatarak her yerini mısır unu ile güzelce bulayalım, yağlı kağıt serili tepside tepsi mayası alması için yarım saat kadar daha bekleterek, önceden ısıtılmış 180 derecedeki fırında pişirelim. Yapanlara şimdiden  Afiyet olsun 🙋🙋

  • Grilled sugar plums ~ feta ~ lentils ~ pistachio ~ honey.

I couldn’t resist #sugarplums, which are in season right now. Any kind of plum dessert is right up my street, but I’m also partial to plums (or any stone fruits) in savoury dishes - especially when teamed with salty flavours like feta or parma ham.
This salad is a great addition to a long lunch this weekend or if you’d like something lighter during the week.

3/4 cup green lentils
1 medium red onion
1 clove of garlic
4 tbsp vegetable oil
6-8 sugar plums, halved and stoned
1 large bunch coriander (leaves and stalks), rinsed 
1 large bunch of mint leaves, rinsed 
1/2 tbsp each of coriander seeds, fennel seeds, cumin seeds (lightly toasted and crushed)
1/2 tbsp sumac (or zest of 1/2 a lime and lemon)
1/2 tbsp sweet paprika
1/2 tbsp chilli flakes 
1 tbsp pomegranate molasses (if available)
3 tbsp olive oil
2 tbsp honey
60gm roasted and shelled pistachio
100gm crumbly feta
1 large handful of baby salad leaves
Salt and pepper to taste

Cook the lentils with a good pinch of salt and pepper (follow instructions on the back of the pack). Set aside.

Finely slice the red onion and chop the garlic. Heat 2 tbsp of oil in pan and gently sweat the onions and garlic with a pinch of salt and pepper until translucent. Remove from the pan and set aside to cool. Heat the remaining 2 tbsp of oil in the same pan and gently grill the flesh of the plums until just charred. Set aside.

Finely chop the coriander and mint and transfer to a mixing bowl. Add the cooled lentils, onions and garlic to the bowl.
Mix the sumac, sweet paprika, crushed coriander seeds, fennel seeds, cumin seeds, chilli flakes and a good pinch of pepper in a bowl. Add the olive oil and honey and mix well. Add a little bit of warm water to loosen if desired. Pour in to the mixing bowl and mix well with the other salad ingredients.

Add the pistachio, crumbed feta and salad leaves just before serving. Check seasoning and adjust if required. Transfer the salad to a serving dish and place the charred plums on top. Top with more crumbed feta and a good drizzle of honey. .

Its then smeared with a good quality mayo and sauteéd spring onions and stuffed with our heavenly chargrilled meats or tofu and topped with lashings of our home-made (secret recipe) peanut sauce. AND if that wasn't enough...we packed it full with pickled carrots & daikon, fresh coriander, cucumber, sliced chillies and for that extra crunch...loads of crispy onions too! Now THAT'S what you call a sandwich!!!!
