  • 🥞 Banana Pancakes 🍌

I borrowed this recipe posted by @nutritiional but I added flour to it because I am not gluten intolerant and I haven't got anything against starch and carbs. Adding bananas is just a nutritional and savoury bonus. Besides, adding some flour to the mix gives it a more pancake-like texture (which is what we want) and allows you to use less butter or oil in the end.
You can definitely feel the bananas when eating, and these pancakes are awesome with (homemade) peanut butter.

Ingredients:
2 bananas
2 eggs
1 tbsp flour
1 tsp baking powder
1/2 tsp vanilla extract
Oil/butter

Smash the bananas with a fork (no need for a blender), add the eggs and mix well. Then add the flour, baking powder and vanilla extract and mix for 1-2 mins.
Heat a pan with some oil or butter (given that you own a decent pan, you only need butter or oil for the first pancake).
You should be able to make 5-6 pancakes, depending on their sizes, just enough to share with someone but also not too much so that you can eat them all by yourself ;)

  • Babka Vegano de Chocolate (V) [DESLIZA PARA VERLO EN DIRECTO]
El sábado os adelantaba la masa previa a este resultado, un delicioso babka vegano relleno de crema de cacahuetes y cacao -sí, la famosa crema de peanut cocoa de @mybodygenius -. Si no sabes que es babka te cuento que esa palabra corresponde a un bollo de masa fermentada -tipo brioche- que se prepara tradicionalmente en Pascua y es de tradición judía. Como soy mujer de palabra te voy a dejar aquí la receta, pero te recomiendo que si quieres hacerla, te pases por mi web donde he ilustrado el paso a paso para que el resultado de la trenza sea perfecto (LINK BIO).

✨ 150 ml de bebida vegetal sin azúcar.
✨ 20 gr. levadura fresca.
✨ 70 ml. AOVE.
✨ 2 1/2 taza de harina integral de trigo.
✨ 1/3 taza de panela o azúcar de coco.
✨ Crema de cacao y cacahuete, la mía de @mybodygenius.
✨1 cucharadita de canela y 1/2 cucharadita de sal..
🌿 Templa la leche, añade la levadura y una cucharada de panela. Deja reposar 10 min. Mientras vierte en un bol la harina y el resto del azúcar. 🌿 Añade a la leche el aceite y mezcla bien.  Haz un agujero en medio de la harina y vierte la mezcla líquida. Combina, primero con una varilla y luego con tus manos. Amasa durante 8-10 minutos y haz una bola. Engrasa un bol y añade la masa, déjala reposar durante 1 hora hasta que doble su tamaño.
🌿 Pasada la hora vierte la masa en una superficie enharinada y forma un rectángulo. Pinta primero la base y luego ve enrollando la masa hasta el final. Haz un corte longitudinal y separa la masa en dos partes. Coloca las mitades con el corte hacia arriba y pasa la una sobre la otra en un enrollado (en forma de trenza).
🌿 Pon la masa dentro de un molde apto para horno y tápalo durante 30 minutos.
🌿 Precalienta el horno a 180º y hornea durante 40 minutos -la corteza estará crujiente y el interior esponjoso-. Deja enfriar antes de servir.   • Happy Easter friends! 🌸 Spring time, Easter egg hunts, brunch, family, Easter baskets, bunnies, and chocolate...some of the many things that make this holiday so joyful. But most of all, the renewed faith and hope emulated by this season is what makes it most beautiful to me. Christ’s resurrection has redeemed our souls and given us the opportunity for new life and hope, not just today, but every day of our lives. And I love that Easter coincides with the season of spring, which can also be seen as a time for growth and redevelopment. With that said, hope you all had a beautiful Easter day😊🐰The recipes for carrot cake 🥕(pictured) and roasted red potatoes 🥔 (on my story but not pictured here) are posted down below! .

🥕Carrot Cake (dairy free, except for the frosting) from @buzzfeedtasty: so this recipe was very moist but didn’t have the same texture as a classic fluffy cake recipe. It still tasted great and had the perfect balance of spices!
-For the cake: Group wet and dry ingredients into batches and whisk in separate bowls. Then add dry ingredients into wet and mix until no lumps. Add grated carrots and raisins. I equally separated the batter into 3 springfoam pans so I could make a tiered cake with frosting in between. Directions call for 350 degree oven and 35 minutes, but I found it to be more like 375 for 45 minutes. Just poke with a toothpick to double check if it’s cooked through! -3.5 cups @bobsredmill all purpose flour
-1 cup brown sugar
-1.5 tbsp baking powder
-1 tbsp each of baking soda, nutmeg, & cinnamon -Pinch of salt
-3 cups almond milk
-3/4s cup melted coconut oil
-1 cup apple sauce -3/4 cup maple syrup
-1 tbsp vanilla extract
-1 tbsp apple cider vinegar
-2 cups finely grated carrot (I would add 1 more cup next time) -1 cup of crimson raisins (I’d add another here too)
-1/2 cup walnuts for garnish -Once cakes are cooked and cooled, add frosting (do not try adding frosting when warm). Making the frosting was the easiest part: 3.75 cups of powdered sugar, 8 ounces of cream cheese, 1 stick of butter, and 2 tsp vanilla extract. I mixed in a food processor until smooth and velvety.
