  • Happy Easter! 🐣 A few years ago on The Kitchen on the @foodnetwork , they made this bunny cake and I’ve made it every year ever since! 🐰 To see how it’s made, just search “bunny cake” on the Food Network website👌🏻

Of course, to make it GF, you have to make a few substitutions! I use @kingarthurflour yellow cake mix, @aleiasgf almond horns (for the ears), and black cocktail straws for the whiskers (the recipe recommends licorice but I’ve never found a GF licorice). The grocery store usually never has the same product I used for the ears the year before, so I always have to get creative.   • Good Friday #goodmorning! I’m working from home today and Bunny is off from school, so I made her some @birchbenders pancakes this morning.

These are Paleo Banana and are made with simple ingredients (like banana, coconut flour, and almond flour), plus they’re dairy-free, gluten-free, and no added sugar... unless you add @enjoylifefoods mini chocolate chips, which I may have done 🤷🏻‍♀️

Here is my quick and delicious homemade vegan nacho recipe! Theses ingredients are some of my favorites but feel free to mix and match different topping 👍

1/2 bag of corn tortilla chips
1 large red pepper
1 small can of black olives
1 tomato
2 limes
2 tbsp vegan sour cream
1/2 package vegan shredded cheddar cheese
1 can of refried beans (GF + V)
1 cup salsa

Preheat the oven to 350 degrees and spray avocado oil onto a large baking sheet. Spread the corn chips out and cover with the vegan shredded cheddar cheese. Add chopped pieces of the red pepper and tomato to the baking sheet. Next, add the black olives and refried beans to the chips. Sprinkle white pepper, black pepper, garlic powder, onion powder, and oregano over the entire baking sheet. Pop them into the oven and bake for 15 minutes or until the vegan cheese is melted 💚

This is a perfect cake for so many occasions- it’s fragrant but not too sweet, so it’s as good for a brunch or a book group as it is for dessert. The texture is amazingly moist, but not too dense. As a bonus, it’s totally gluten free though being an almond base it’s obviously not suitable for those with nut allergies. ⁣

Recipe:⁣
Perfect 5-ingredient Almond Cake⁣
⁣
1. In a mixing bowl, combine 250g ground almonds, 250g (golden) caster sugar, the zest of one medium lemon, and 3/4 tsp cinnamon (I used @burlapandbarrel Cinnamon Verum). ⁣
⁣
2. In a second bowl, whisk 5 large eggs until scrambled. Add the eggs into the almond mix and stir until combined. ⁣
⁣
3. Pour the mixture into a well-greased springform pan, and bake at 180C/350F for 30 minutes or until golden.⁣
⁣
Cool and serve with the accompaniments of your choice! (Tonight it was blackberries, toasted pistachios, rosemary flowers, a drizzle of Scottish heather honey, and a spoon of whipped cream.)⁣
