For those who don't know, I am having foot surgery tomorrow. Nothing major, but I can't put pressure on my foot for a couple months. The first week will be the worst, and unfortunately my hubby doesn't have leave since we just used it. So today I got groceries, meal prepped for the week, and am cleaning the house! Only a couple of hours, and all my meals for the week (and the husband and children when they'll be home) are ready for either the oven, microwave, or Crock-Pot! Thursday Night Crockpot Dinner Number 10
Kielbasa and Sauerkraut:
3.5 pounds smoked Kielbasa
32 ounces drained sauerkraut
1 large onion (diced)
1 stick of butter
1/2 cup brown sugar
Add all ingredients
Cook on high for 3 hours
And low for 5 hours
Serve on buns
And with mashed potatoes
Had to do a vegetarian day after the big porchetta weekend. Did some chana dal in the slow cooker and decided to try making naan for the first time. Pretty easy and used a cast iron skillet. Wish I had a tandoor!

Shredded crockpot chicken:
Put 3 chicken breasts in the crock pot along with a can of @catawbabrewing White Zombie, 1T of garlic powder, cumin, chili powder, and paprika, then cayenne pepper, salt, and hot sauce to taste. Cook in the crock pot on low for 8 hours, then shred the chicken.
We paired the chicken with Mexican quinoa, guacamole, salsa, and cabbage to make the most filling burrito power bowl! 💪🏼
Dinner tonight was crock pot potato soup, 3 points a bowl and a 'grilled cheese' bagel thin and a slice of cheese. Used a very thin layer of butter on the bagel. The soup is 6 cups of shredded hashbrowns, 1 can of fat free cream of chicken soup, 1 bag of ff shredded cheddar cheese, fat free cream cheese and a thing of chicken broth all tossed in the crock pot for 3 hours!
