One thing I’ve always been pretty bad about is making sure I have enough food to cover breakfast for the adults of the house. Our usual go-to has been HB eggs, roasted sweet potatoes and avocado, which are all super easy to prep in advance and serve quickly in the morning. But I am burnt out on HB eggs (even though we are having them tomorrow 🙈) Something new we’ve tried twice this week, both times having kept me full until lunch (about 4-5 hours after breakfast), is this hearty + healthy breakfast bagel sandwich. When I was traveling to CA for work before babies, a cafe near my office served up something similar and I would make sure to get it at least 2-3 times while there in a week! Don’t judge 😂
I love being able to make this at home because I can control the ingredients and portions.
Here’s how it comes together:
↠ Dave’s killer everything bagel, toasted
↠ 1 slice of ham, warmed in a pan + 1 fried egg in ghee (I poke and cook my yolk all the way through)
↠ Handful of fresh spinach, not sautéed (but I suppose this would be good, too!)
↠ Dijon mustard and cream cheese (today I used veggie cream cheese, but onion + chive or plain are both very good too!) // I tend to layer it like this: Dijon mustard on bottom bagel portion, ham, egg, spinach, cream cheese on top bagel portion, cut + serve 😍
These Chocolate Keto Pancakes taste so yummy!
2 heaping cups blanched almond flour
8 oz. full fat cream cheese
2 tbsp cocoa powder
2 tsp granulated sweetener (Erythritol)
butter for cooking
1. Place all ingredients, except butter into a high speed blender.
2. Heat skillet to medium heat. Add butter, 1 tablespoon at a time.
3. Pour pancake batter into skillet in 6 inch diameters.
4. You will need to flip before the normal bubbles are evident, lift edge to check doneness and you’ll be able to see when to flip them.
5. To serve, use your choice of Keto friendly syrup and fresh berries of choice.
I found it important to give y’all this in case you decide not to read the entire article (although you should cause, it’s GOOD). I believe it’s easy as women to place blame on everyone else as to why we can’t get ahead in various industries. I’ve found in my 10+ years in makeup and as a food blogger WE are our biggest hang ups. WE don’t support one another enough. You can’t tell me women, who are mothers to the world can be held back by others if we stuck together. Nah, I’m not accepting that. If we really viewed each other as SISTERS we could birth some magical shit. We would dominate every industry! Period! Let’s do better ladies!
