INGREDIENTS
-1 large celeriac, peeled and cut into 4 slices, each 2.5cm thick
-1 tablespoon olive oil
-A pinch of sea salt flakes and black pepper
-1 heaped tablespoon chopped chives, to garnish

MUSHROOM SAUCE
-Vegan cream cheese
-Lemon juice
-1garlic clove
-1 tsp mustard
-1 tablespoon olive oil
-2 handfuls spinach finely chopped
-500g chestnut mushrooms, trimmed and sliced

CAULIFLOWER QUINOA
-1 cauliflower
-Pouch quinoa
-1 clove garlic
-Salt and pepper
-Preheat the oven to 220C fan
-Line a baking sheet with baking paper.
-Brush the celeriac slices with the olive oil, season generously and place on the prepared sheet. Roast for 20 minutes, then turn and cook for a further 10–15 minutes, or until nicely browned around the edges. Remove from the oven and set aside
-Cut cauliflower into small pieces and roast with lots of olive oil, add 1 clove finely chopped garlic and season well
-Once roasted to your liking, add pre cooked pouch quinoa and cook for 5 minutes
-For the stroganoff sauce, heat the olive oil in a large frying pan over a medium heat
-Add the mushrooms to the pan, season generously and stir to combine. Cook for 5 minutes
-Add spinach cook 2 minutes
-Add the garlic, lemon zest, pepper and 1 tablespoon of the lemon juice. Season with salt and pepper and cook for a further 5–10 minutes until the mushrooms have shrunk and are lightly golden
-Add cream cheese, stir in the Dijon and remaining lemon juice and bring to a gentle simmer. Cook, stirring, for 1–2 minutes, thinning out the sauce with a splash of water or olive oil if it becomes too thick. Season to taste
-Divide the celeriac steaks among plates and top each with a spoonful or two of the stroganoff sauce. Garnish with a sprinkling of chopped chives and roasted nuts
