It's Summer !!! And no summer is complete without Mangoes. Inspired by @radhavallabha.mumbai of Yogi Plate and to celebrate Panihati Festival, offered Flattened Rice with Yogurt and Mangoes. Growing up, Doi Chire - was a regular feature at our home - either with bananas or mangoes or just plain. Added a dash of saffron and cardamom powder , coz I am always xxxxxtraaaaa......

My version :

Wash about half cup of flattened rice (poha) in running water and then let it soak in water for 2-3 mins. Squeeze and drain the Poha from the water. Washing it in a big sieve is recommended. In a separate bowl add a cup of yogurt, fresh mango pulp, some sugar or Jaggery (optional), small pinch of crushed saffron and a small pinch of cardamom powder. Before serving/ eating, mix the Poha in the yogurt mix. Top with more mango pieces. Offer and serve with love. .

P.S. - I served it as a parfait in a glass.
Bottom layer - Poha, topped with mango pulp, and final layer of yogurt. Garnished with chopped mangoes and a sprig of mint.

I can’t believe that when I was younger I wouldn’t eat more than a burger the whole day or if I ate more I changed the scale so I would be “under 100” lbs. Now that I’m more aware of healthier foods, eat tons of Whole Foods, organic, minimally processed, and try to eat as plant based as possible, I don’t worry like I used to. I feel better, I have more energy, my workouts are better, overall just know I am healing and keeping my body as toxic free as I can! Prevention is key! 💪🏼

❤️ Breakfast: I whipped up banana bread pancakes: spelt flour, egg, banana, alcohol free vanilla ex, baking soda, cinnamon, and nutmeg, topped with organic pb and organic maple syrup, side of strawberries
❤️ Snack: popcorn tossed in avocado 🥑 oil and Himalayan salt
❤️ Lunch: organic Whole wheat wrap with garlic hummus, spring mix, red peppers, and a veggie burger
❤️ Snack: 2 pb @froozeballsusa
❤️ Dinner: used my #instantpot to make spicy teriyaki stir fry. Added a couple bites of chicken to mine- more rice and veggies for me please 😍
❤️ Dessert: Hot apple crisp with @so_delicious vanilla bean coconut milk ice cream!

Don’t be afraid of food!!! Be afraid of the highly over processed, fake foods, fast food, not eating enough foods that are really wholesome and packed with vitamins and minerals!
