  • In honour of #nationalvegetarianweek Evelyn and I got in the kitchen together yesterday to make one of our all time favourite dishes . 👩🏻👧🏼

Our CREAMY PORCINI GARLIC MUSHROOM RISOTTO with tenderstem broccoli 🥦 .
.
We used brown rice instead of the typical arborio but both work well! .
Ingredients: . .
• 250g arborio, risotto rice or brown rice .• a handful of dried porcini mushrooms, soaked in boiling water
• 2 shallots, diced
• 3 cloves of garlic, finely chopped
• 250g wild or chestnut mushrooms
• 1 glass of white wine- can be subbed for water if for babe (but alcohol does burn off) .
• 1 tbsp olive oil
• 5 stalks of tender stem broccoli

• 1 dessertspoon of nutritional yeast
• 500ml low salt vegetable stock
• 2 tbsp @nushfoods cream cheese (natural)

DIRECTIONS 🧭
. • put the dried porcini mushrooms in a bowl, cover with boiling water and soak for 15 minutes
• Heat the oil in a saucepan
• Add the shallots and shallow fry until translucent in colour, not brown
• Add the garlic
• in another pan add 1 tbsp olive oil and 1 garlic clove and sauté the brocolli- once starting to soften/ char - remove and set aside • Drain the mushrooms and reserve the soaking water
• Chop the porcini mushrooms
• Chop the wild/chestnut mushrooms
• Add all of the mushrooms to the pan pan with just the olive oil and garlic (not the broccoli pan) and stir
• Add the wine / water
• Add the rice and stir
• Slowly add the stock and the soaking water stirring all the time for approx 15-20 minutes- add in brocolli 5 mins before end- if using brown rice it will take longer - read packet instructions but generally 40-45 mins (don’t need to stir as often!) • At the end season with salt, pepper and nutritional yeast and stir in two tbsp of the plant based cream cheese • Serve 👌🏼 🍚 🥦 🍄 🍷 In honour of #nationalvegetarianweek Evelyn and I got in the kitchen together yesterday to make one of our all time favourite dishes . 👩🏻👧🏼 .
