  • Random shoutout for the joy of entertaining. I love the planning, shopping, prep. I love setting the table (pretty dishes, yay!). I LOVE when everyone is here and talking in all the directions and eating and drinking and laughing. I even love the clean up and putting everything back in its place. Just sitting here making a list of things to do more of in 2019 and having more parties is definitely one of them. #parties #entertaining #2019 #fun

  • Chopped salads! Who else is a fan? 🙋🏻‍♀️ In my opinion, totally worth the extra time to dice up everything evenly because it multiplies the flavor exponentially. I made this salad for a luncheon meeting yesterday. It’s based on a favorite from the men’s Bergdorf Goodman cafe from many years ago. Basically diced radish, celery, pickled beets, scallion, olives, ham, smoked turkey, cheese, avocado, crispy prosciutto, with chopped greens & basil, toasted pine nuts, and medium-boiled eggs on the side (or chopped in, up to you). Mustard-balsamic vinaigrette (that hint of sweetness from balsamic really pulls everything together.) Every bite is the same mix of yum and it’s pretty and FUN.   • Another soup! Well #winter. And #yum and #easy and so on. This is a version of stracciatella aka Italian egg-drop soup. You can turn any brothy soup into stracciatella which will improve its deliciousness and nutrition FTW. For every 2 servings of gently simmering soup, whisk together a large egg and 2 (or more) tablespoons freshly grated Parmesan and a pinch each of salt and nutmeg. Stir spoonfuls into the simmering soup - the mixture will swirl into shreddy ribbons as the egg cooks. Serve with a drizzle of fruity olive oil and lots of black pepper.   • Happy Birthday (yesterday) to me and to my blog, Fresh Tart, which I started on my birthday back in 2006. Crazy! I couldn’t have imagined where it would take me and my life. I realized yesterday that everyone I celebrated with all weekend long I know because of Fresh Tart. Astonishing. I had a magical weekend and I savored every moment of it.

It started on Friday with that glorious cake, made and photographed by @zoebakes (see her Insta-stories for tutorial and make it!). She subbed in GF flour and it was divine. I’d post other pictures from Friday night, when I had a few ladies over for bubbles and game night, but frankly, they’re too obscene. 😂 I love my saucy friends to the moon and back.

Saturday night Erik and I had the pleasure of attending one of the soft opening seatings for @pssteak, in the former @labellevie510 space, and it was pure nostalgia-but-new. The space is dead sexy and the food is too. I couldn’t be more excited for @youngchef and crew to be back in their beloved space. They’re going to make magic there.

And last night (yes, I am full), we had dinner and spent the night @almampls. I’m still in our room, in fact, which is a dream. <never leaving> I’m sipping coffee and nibbling on breakfast, in bed, and reminiscing about the extraordinary (!) wines, the caviar, the seared scallops with lentils, the pommes dauphinois, and the always delightful company of @maryjohoffman and @sjrhoffman. Was it a dream?

I’m feeling so in love with the Twin Cities. Can you tell? 😂 It’s too easy to get slammed with work and life and not remember how much beauty there is right here. Thank you @alexk_roberts and the whole Alma crew for an unforgettable meal and birthday. And thank you @easyandcompany for making it all happen. .

  • Simple crispity chicken thighs are a #projectvibrancymeals winner. Everyone loves ‘em. No breading, just seasoned, crispy skin and tender meat. It makes me incredibly happy when people love the flavors I build into PVM, but it makes me just as happy that members deepen their cooking skills. I’d argue that the single best way to take charge of your health is to cook your own food. It’s a life skill and once you have it nailed down, you can make fast, delicious, real-food/nutrient-dense dinners every night, no problem. Cooking does NOT have to mean endless dishes and a giant mess. It CAN mean more nutrition, saved money, fun dinners, healthy weight, more energy. Batch cooking makes it even faster. #vroom #mealplans #mealplanning #realfood #paleo #primal #autoimmuneprotocol #keto #lowcarb #nutrientdense #deliciousandnutritioùs

  • LOTS of #Whole30 recipes (like this kale pizza frittata) on my blog Fresh Tart. I love the #Whole30 model because it’s abundant real food, for long enough to *feel* different and help you *see* how crappy food and too much booze are making you feel (um, crappy). And with a million great recipes and fun support to boot (we all know friends doing a #januarywhole30). My best advice is: reintroduce the foods you eliminate one at a time. Don’t waste your efforts by eating pizza, beer, and ice cream for your first meal. You’ll never know what was depleting you: Sugar? Gluten? Other grains? Dairy? Alcohol? The end goal is to eat as many wonderful, delicious, nutritious foods as possible while feeling and looking your best. During a #Whole30 is a GREAT time to shift your paradigm about what defines “delicious.” I like #deliciousandnutritious myself. An and/both mindset. Nourishment. Self care. All those good things. I’m brimming with plans, ideas, recipes, experiments (always 😂), clarity, motivation, dorkiness, energy, glimpses of wisdom, and the blessings of good health, a pretty good mind, and a very full heart. (I credit bubble water instead of champagne last night for at least half of my #vroom this am, in case you’re wondering why I’m so chipper). I woke up this morning with a fluffy dog staring at my face, reminding me that 0F is plenty warm for a walk. 😩 It’s -20F in Grand Forks, where I’m from, so I know I can suck it up. 😂 Stay warm, Northerners! And enjoy this last day of holiday-ing. Please share with me the first thing you’re cooking in this new year!   • Hard year. Great year. Ups were UP. Downs were DOWN. Definitely not boring! Learned a LOT about myself and how far I’m willing to be pushed before I push back. I went to a burn party last night where I tossed a sheet of paper in the fire listing on one side all I would like to leave behind in 2018, and on the other side all I would like to invite in for 2019. And I spoke aloud: “In 2019, I would like to be less nice.” That might seem a weird thing to say, except I tend to be *too* nice for too long which then makes me mad as hell. 🌋 So this year, I’m shooting for straight down the middle. I’ll never not be nice - it’s who I am - but I’m making friends with that anger too so I can use it appropriately, when needed. Anyhow, I’m super excited for the new year, much more than I was last year. I have been tested mightily the last 5 years and I can finally look back and see some real progress. I hope you can see yours too! I love sharing food and health with you all and look forward to more #nutritiousanddelicious in 2019! ❤️

  • Back to lower carb, moderate protein eating which is definitely my happy place. I experiment with eating more carbs - post workout, only in the evenings, carb cycling, non-grain carbs, blah blah blah, and every time I feel (and look) like hell. It’s tricky bc my Hashi’s can flare if I stay low carb too long, or if I work out too hard, or especially both together. I’ve messed up twice in 2018 with those experiments (I can’t help it, I love to experiment). 🤦🏻‍♀️😂 Soooo I’ll take all that I know - which is a LOT - into 2019 and keep the focus on nutrient density, real food, proper supplements, good workouts, great sleep, nature, fun, and stress management, the combination of which always steers me right. Oh! This is tortilla soup without tortillas: chicken, chicken broth, tomato, cumin, oregano, zucchini, carrots, onion, garlic, radish, spot of cheese, avocado, sour cream. #paleo #grainfree #lowcarb #keto #primal
