  • Chicken breasts. Snoozeville. And yet...an affordable and massively versatile source of lean protein. And so, I make them often, a couple of times a week at least, but I make sure I sass them up. (I accidentally said “perk them up” in my Insta story and died laughing later when I saw that I used breasts and perk them up in the same sentence. So me, hahaha. 🤦🏻‍♀️🙋🏻‍♀️ Anyhow we’re SASSING them up. 😂) It is imperative to cook them gently so they don’t turn to rubber. You can marinate for flavor, but if you’re in a rush, try this:
1. Brown garlic, capers, and lemon slices in olive oil. Remove from pan.
2. Salt chicken breasts on both sides. Pound flat a bit for more even cooking. Add to pan and cook gently - medium-low heat - turning once, until just cooked through. Add a couple of fresh thyme sprigs to the pan if you like. Transfer to a cutting board to rest for 10 min. 
3. Top chicken breasts with garlic/caper/lemon (and some of the thyme leaves) and feel free to eat as is OR using a serrated knife, very thinly slice/shred the chicken and seasonings all together. Season the pile to taste with salt and pepper, toss.   • I gave up caffeine 5 months ago and it has significantly improved my health. DO NOT PANIC reading that, ha. I was in the midst of a lot of stress and while I have always been sensitive to caffeine, even one cup of coffee was exacerbating my feelings of anxiety and messing with all of my hormones, including my thyroid. I had to be honest with myself about this drug - caffeine is a drug, and a damn addictive one at that - and how it was affecting my health. I took two weeks to taper off, by slowly changing the ratio of caffeine:decaf coffee beans until the beans were 100% decaf. (I realize decaf coffee has some caffeine in it.) I avoided the headaches and general malaise that accompany caffeine withdrawal (I’ve gone cold turkey before...ouch, don’t do that). I also focused on drinking plenty of filtered water. Within a few weeks - 3? 4? - my sleep quality (I track with a FitBit) improved in a significant way, a LOT of eye swelling/inflammation exited my face, my joint pain improved, my anxiety evaporated, and...I had SO MUCH MORE ENERGY and less brain fog. I had eliminated caffeine for a whole year when I first began AIP but it had crept back in - I’m never letting that happen again. I’m now enjoying a cup of decaf most mornings, although not every morning, because sometimes I don’t feel like it or have time. I often don’t even finish the cup, not on purpose, I guess I just enjoy the first sips (years of conditioning) and then I get busy and forget about it; that never happened with caffeinated version. I LOVE that I’m free of the grip of caffeine. For those of you who are curious, yes I am a genetic slow caffeine metabolizer via 23andMe, which surprised me zero. If you’re struggling with poor sleep quality, anxiety, and/or inflammation, it might be worth an experiment? Don’t shoot me for suggesting it, ha. ☕️

I deeply love them both and can hack the occasional nightshade exposure (but I’ll definitely feel it and absolutely can not do more than once let’s say a month. I probably don’t even do that often). Life without chiles and tomatoes is tough eating in the wild (aka restaurants) but it’s quite delicious at home once you get the hang of it.

  • Oh eggs. I love you so, but you do not love me back. I can eat an egg occasionally and feel just fine. But if I try to eat one every day (because nutritious, cheap, and YUM!), pffffffft. Eyes start itching and turning red and inflamed. 😩 Ah well, I’m glad I can enjoy occasionally. Have you had similar experiences with food reactions and reintros? It’s a pretty common outcome after an elimination diet: always foods, sometimes foods, never foods. That knowledge is gold!   • Flank steak rubbed with coffee, chili powder, brown sugar, and salt, and finished with lime, is my new obsession. Holy cats was that killah. With grilled zucchini, corn, and carrots (hadn’t grilled carrots before, they’re marvelous on the grill). And a salad of GF pasta, arugula, pine nuts, capers, and olives. Pure summer heaven. There are several reintros in this meal for me: nuts, chili powder, coffee, GF pasta, wine. I can’t eat those things every day or I start to have reactions, but I’m at a point where I can handle them on an occasional night out. How did I figure it all out? An elimination diet.   • Happy Father’s Day! I have two posts on my blog, Fresh Tart, about my dad and cooking. It’s damn fun to read back over them - one of the very great things about blogging for years (FT is 13 years old!) is that you can read back about your own life and remember wonderful times and raves otherwise forgotten. The first post is about pancakes (not GF, sorry...), which were a summer Sunday staple when I was a kid. The second is about fried walleye, and also includes my Grandpa Meyer. ❤️ I could also have written about buttery Saturday night popcorn and pineapple malts (which are amazing). I need a new one about grilled whole wild ducks, or about fried quail, but those will have to wait for other (delicious) days. Enjoy the day, dads! And know that your kids are paying attention to and remembering fondly all the loving, yummy things you made for them. Thanks to my dad for inspiring me to love and cook real food! 🥞🐟🍗🥓🍿

  • I was driving home last night around Lake of the Isles and had to stop to watch the sunset. In fact, everyone stopped to watch the sunset. I would say that I love summer here the most, but it’s not true. Yes, I love finally being outside and having sun on my skin (there was a pretty serious craving there for awhile), but in the fall I swear *that’s* my favorite. I was the weirdo who really loved the deep freeze and snow this winter - I felt 100% guilt-free holing up and writing and watching movies and cooking. I guess I’m finally embracing the Midwest. I’ve only lived here - with one foot out the door - my entire life. 😂

  • On a coaching call last night, we chatted about meeting cravings with healthy alternatives that taste amazing and are nourishing but don’t make you ill. When I embarked on the autoimmune protocol, this is what actually excited me. It was a creative challenge that I enjoyed, especially as I felt better and better. Even as I’ve reintroduced foods like occasional dairy and GF grains (as in, I can go out for GF pizza and feel fine), for the most part, my paradigm has shifted and my standards are higher: I want to eat foods that are delicious AND make me feel great. It’s been a fascinating - and sometimes super effing irritating! - journey to discover those foods but I’ve found my sweet spot. No surprise, it looks like fresh, real food, cooked simply at home. This flatbread got me past many pizza cravings and turned into one of my son’s favorite meals. I love it piled high with a simple arugula salad.
