Top greens/veggies/fruit with roasted vegetables or potatoes, warmed roast chicken or steak or meatballs, perhaps a few nuts/seeds or a crumble of cheese, and drizzles of a zippy condiment. Make sure to season your salad with salt (always). Eat right away. This version is roast pork, glazed carrots, pepitas, olives, and figs over greens with a drizzle each of maple turmeric dressing and chimichurri.   • A great question came up in my Spring SAD (re)Start group yesterday regarding introductions and what I’ve added back to my diet after following the #autoimmuneprotocol intro phase. Eating as many nutritious foods as possible that don’t cause inflammation, reactions, or flares is the end goal of an elimination diet. For me, and for many, that means being able to slowly reintroduce and occasionally enjoy foods like dairy, GF grains, eggs, chocolate, wine, and nightshades. I can not eat those things every day, or I start to have symptoms, but once in awhile is fine. Because of an elimination diet, I know that I can never eat coconut, almonds, or gluten. Caffeine makes me feel like hell. And with that info, I can make informed decisions in restaurants and have more ingredients to play with when I entertain. Basically, an elimination diet opened up my options and gave me knowledge. And allowed me to creat a fun dish like this spaghetti & meatballs frittata and enjoy it once in awhile!   • Despite the cold, I’ve been playing with morning smoothies and really enjoying them. I like the boost to my skin and I find the protein really easy to digest. There is definitely an art to creating a nutrient-dense, creamy, tasty smoothie without making it an absolute carb bomb. I like what I’ve come up with (I’ve been sharing recipes in my stories) and am going to share my tips on my Fresh Tart Facebook page this Thursday at 12:30 pm.   • I spent the morning making an epic lasagna in my pajamas while dancing to Coldplay (see how I made a music pun given the temp outside?) and I don’t know, there may be no better way to spend a cold Sunday morning. I started with soffrito, cooked until caramelized. I added in stages a little bacon, then ground beef and ground pork. Herbs & spices. Wine. Tomatoes. I roasted a pan of thinly sliced zucchini to layer into the middle and I really liked it that way. I seasoned the ricotta with basil pistou and nutmeg, skipping egg (not missed). Layered GF noodles up with the whole shebang and tons (!) of cheese. My god, why don’t I make this more often? I had enough for 10 people on purpose, because I wrapped up the rest for @nathanderson29 and @sam_medler in individual pieces to freeze and reheat for lunches. And oh the simplest and lightest of Caesar salads - my cheat dressing that will be showing up in my condiments ebook, parm, black pepper. I made glutenful pistou croutons for Nathan & Sam but happily had mine sans croutons. Just a happy, cheesy, lazy lunch and such a fun end to a delicious weekend. Time to write for awhile and take a bath and go nowhere because brrrr. Still hygge-ing hard up here in the North. #hygge #lasagna #homecooking #eatathome #sundayfunday #glutenfree #notpaleo #polarvortex #somuchsnow

  • There aren’t many restaurants in the Twin Cities that have labeled #autoimmuneprotocol dishes on their menu but @redwagonpizza has two. This Sticky Roots dish is broccolini, squash, and carrot wrapped in speck and roasted in their wood-fired pizza oven, then finished with a drizzle of maple syrup. AIP or no, it’s just utterly delicious and should not be missed. I dug right in with my hands with zero qualms about licking warm, salty maple syrup off my fingers, nope. Good, real food prepared with love is the best food. The GF pizza with @siftglutenfree pizza crust is killah as well. Double Pep aka two layers of pepperoni is my pepperoni dream come true. No pic of that because we inhaled it. Thanks for the fun lunch and LA eating tips, Peter & Jacquie! You guys are making healthy magic. #paleo #primal #freshtartpicks #glutenfree #pizza
