  • Couldn’t decide between naming this “Quinoa Crunch Salad” or “Literally Everything Good There Is To Eat In One Recipe." We’ve got crunchy! We’ve got sweet! We’ve got spicy! We’ve got creamy! And honestly, it’s the kind of recipe that just *might* make you forget that it’s winter out there.⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Blitz up for the dressing:⠀
- 1/2 cup peanut butter⠀
- 1/3 cup soy sauce⠀
- 1/3 cup vinegar⠀
- 1/4 cup sesame oil⠀
- 1-2 tablespoons chili paste (like sambal oelek)⠀
- 2 tablespoons honey⠀
- 1 clove garlic⠀
- 1 knob of fresh ginger, peeled⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cook 2 cups of quinoa and let cool. Chop up a cucumber, a bell pepper, a mango, a few carrots, and half a head of purple cabbage. Cook and cool a few cups of shelled edamame. Build you salad! Veggies, quinoa, dressing, and top it all off with some of your favorite crunchy toppings (highly recommend spicy cashews here). YUM.⠀

Prepped and made in minutes so short, it won’t blame ya if you wait 'till Monday.⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add to an Instant Pot (or slow cooker!):⠀
1 pound boneless skinless chicken breasts⠀
12-16 ounces Andouille sausage, sliced⠀
1 14-ounce can fire roasted crushed tomatoes⠀
2-3 tablespoons tomato paste⠀
2 green or red bell peppers, chopped⠀
half an onion, diced⠀
3 cloves garlic, minced⠀
1 tablespoon Creole seasoning⠀
1-2 teaspoons salt (if your seasoning doesn’t have any)⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cook everything on high manual pressure for 8 minutes, quick release the steam (for slow cooker, cook 4 hours on high or 8 on low). Shred the chicken and serve in containers with rice.

Whisk up for the sauce:⠀
1 cup Greek yogurt⠀
1 tablespoon olive oil⠀
1 tablespoon vinegar or lemon juice⠀

1 generous pinch of fresh or freeze-dried dill⠀
1 teaspoon salt⠀

Except for when it *does* get a little old and you remix it with some whole wheat orzo and zippy lemon and a secret creamy ingredient and a borderline inappropriate amount of dill. Sauté up some a few cups of diced carrots, half a diced onion, and a few cloves of garlic. Once softened, add 8-10 cups of broth and a cup of orzo and simmer until cooked. Shred up a rotisserie chicken and add it in. Remove from heat.
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
In a bowl, whisk up 3 eggs with ½ cup of lemon juice. Add a little bit of the soup to the bowl to slowly heat up the eggs (patience!). Then add your warmed-up egg mixture back into the pot slowly until combined and creamy. Add in a handful of spinach, salt + pepper, and a bunch of dill. YUM.⠀
