  • If we had a cookbook this one would be filed under “Healthy Things That Don’t Taste Like Sadness”. There’s chickpeas simmered in a fire-roasted spiced tomato sauce; there’s some seriously fluffy couscous; there’s cucumber salad because we love a good herb party; yogurt or hummus because Sauce Is Life; and toasted pita wedges because we are only human.⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here's what you'll need:⠀⠀
1 tablespoon olive oil⠀⠀
1/4 cup chopped onion⠀⠀
1 clove garlic, minced⠀⠀
1 tablespoon each – chili powder and cumin⠀⠀
1 teaspoon each – turmeric and garam masala⠀⠀
1 teaspoon sea salt⠀⠀
dash of each - cinnamon and cayenne⠀⠀
2 14-ounce cans chickpeas⠀⠀
2 14-ounce cans fire roasted diced tomatoes⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat the olive oil in a large skillet over medium heat. Add the onion; sauté until soft. Add the garlic, spices, salt, and chickpeas – stir until very fragrant. Add the tomatoes (undrained) and simmer for 20 minutes.⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve the chickpea mixture with all your fave health things and a boatload of herbs (mint, parsley, cilantro). yum!⠀

  • Hands up if you've already stocked your fridge/freezer/belly with these Meal Prep Breakfast Sandwiches? 🙋🏼‍♀️🙋🏽‍♀️🙋🏿‍♀️And if you haven't, it's not too late, friends! All you gotta do is bake up some eggs on a sheet pan with a little bacon and spinach (or anything you want - you do you), cut 'em into the cutest little rounds, and stack them up with some cheese on an english muffin. Your bleary-eyed Monday morning is gonna thank you for this. 👊🏼⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the eggs: whisk a dozen eggs, 1/4 cup of milk, and 1.5 teaspoons of salt. Meanwhile crisp up 6 slices of bacon (cut into small pieces) in a pan and add a few handfuls of spinach until wilted. Mix it all together in a bowl and pour into a well-greased 13"x18" pan and bake at 300 degrees for 15 mins until just set.⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cut into rounds using a wide mason jar lid, stack them on english muffins, add some cheese, and wrap! Keep in the fridge for 4-5 days or freeze. From the fridge, we like to reheat these in an oven at 425 for about 10-15 mins. From frozen, double the time!⠀

  • So, three ingredients walk into an oven… Eh, trying to write that joke would take like a thousand times more effort than this meal prep magic. Seriously. It’s the holy grail of lunches/meal starters and we’re not kidding around with its simplicity. Roasted spicy chicken (hellllllo protein!), your veg of choice (we love brocc) and sweet potatoes. Get these pans in the oven and give yourself a high-five cuz you set for the week.⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here's your grocery list:⠀
2 lbs. boneless skinless chicken breasts, cut into small pieces⠀
3 tablespoons spicy seasoning mix (we used a cajun blend)⠀
a few tablespoons of olive oil⠀
3 sweet potatoes, peeled and diced⠀
5–6 cups broccoli florets⠀
coarse sea salt and freshly cracked pepper⠀
avocado / hummus / lemon juice / chives / olive oil for serving⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat your oven to 425 and prep all your ingredients according to video. Bake everything for 12-15 mins, then remove the chicken and broccoli. Stir the sweet potatoes and roast for another 15 mins. Pack it all up for the week!⠀

All you gotta do is bake up some eggs/spinach/bacon on a sheet pan (easy!), cut them into perfectly round circles (crafty!), and stack 'em up on an english muffin with some cheese to store away for safe keeping/eating. Be still, our perfectionist hearts. ❤️
