  • If there is only one soup left in this world, I hope it is minestrone! πŸ₯£πŸ₯£ Here is my version of this humble, yet soul-satisfying, meal ☺☺
Ingredients:
- 1/2 cup dried kidney beans (boiled)
- 3 spring onions - 3 garlic cloves - 3 tsp olive oil - 1 carrot (cubed)
- 1 cup green beans (1 cup)
- 1 stem celery - 1/2 red capsicum - 1/2 yellow capsicum - 3 cups veggie stock
- 1 bay leaf
- 1 tsp thyme
- 1 tsp marjoram - Salt and pepper, to taste - 2 cups tomatoes (finely chopped)
- 1/3 cup orzoΒ (boiled and water drained)
Method:
- Heat oil in a pot and add onion and garlic. Saute for 2-3 minutes.
- Add all the ingredients, except orzo and kidney beans, and simmer on low heat for 30-40 minutes.
- Add the kidney beans and orzo, mix well and cook for 1-2 minutes. Serve hot 🍜🍜
To make this soup more flavourful and energy-packed, substitute veggie stock with brine left behind from boiling the kidney beans.
